Look at Thor fighting Thanos. Notice how every one of his blows is aimed at Thanos' head. Cap vs Thanos: Thanos catching cap's hand instead of Mjolnir because he knows that he can't stop the hammer, but he can very well stop the man wielding it.
Thanos was able to beat some of most powerful Avengers without the infinity stones. You can see just how powerful Thanos was in this scene. I loved this movie.

Notice how mjolnir continuously bashing thanos' uru helmet (stronger than vibranium) turned it brittle. So that's why thanos was able to tear caps shield with his blade because cap kept weakening the shield by smashing it with mjolnir while fighting against thanos.

It's also why Thor wanted to create Stormbreaker, an axe which is of course a better killing weapon than a hammer. So know it didn't actually contribute to it at all. Easy to mistake I suppose.

Thus his armour couldn't be made from Uru as this same armour was shown in the flashbacks with young Gamora. As for the sword, it pretty much could be Uru but we don't know for sure. The armour is most likely made from a strong material but not as strong as Uru or maybe even Vibranium as Cap was able to destroy Thanos' helmet like you said. This is backed up by how easily Wanda was stripping the armour apart. Could she do this as easily if it were made from Uru? Who knows because that means she could easily destroy Mjolnir which doesn't sound quite right. I previously explained how Mjolnir doesn't damage the shield so I don't know why you're listing how it was battered anyway. Thanos simply destroyed the shield since he's using a sharp object made from a material that at the very least rivals vibranium. His strength of course plays a factor into the striking blows. To reiterate there is no explanation for what Thanos' sword is made from within the MCU.
