I would shallow fry....deep frying is not good for the heart.....also after the making the Vadas....place them in the frig for thirty minutes....will harden up and easy to shallow fry....to make this crispier add corn starch or rice flour.....easy to handle the dough.....Thanks for sharing the recipe....Good wishes...

You may feel rawness inside of vada . Parboiling in salt water enhances taste & inside vada it will be soft & out side crisp.
