Writers completely messed up Elena's behavior and character with her transformation into a vampire. Her spirit and courage and morals completely wiped out after the sirebond. Sirebond may only alter behavior. But our behavior has consequences that can alter our emotions. I think that's why Elena never returned to Stefan. She could never be the girl that he fell in love with.
I'd like to think that Vampire Elena would have been just as good.. but the writers changed her character soo much after she turned.. the made her into this selfish whiny person who gave up all her morals and qualities which made her in the earlier season.. I would have loved to see Vampire Elena and Stefan together where Elena's character wasn't changed so much tbh

I don't think they would have worked as a couple after season 3 plot, whether she became vampire or remained human. They were hinting a lot about her potential relationship with Damon.
