Thank you for the video. I'm not sure if it were Choy Sum (aka Yu Choy Sum), Pak Choy or some other of the mustard greens family, but my mom used to harvest the young plants when the longest leaves were only at ~ 6 inches of growth, then she removed only the roots of each plant, leaving it whole, then washed and tossed them whole into heated oil and garlic until wilted and cooked lightly. So simple and delicious! Wish I knew which plant it was.
