i ate like this as a teenager while my parents (who belong to the top 5%) ate fish and salad and steak. I was a vegan for a total of three years till I got brainwashed by the healthcare industry- where my coworkers would accuse vegan parents of neglecting their children (used to be a nurse, gave it up though). My bloodwork was and still is in amazing condition. I was and still am effortlessly slim bc I eat majority this way (plant based). After experiencing homelessness twice once quitting nursing, and only making 800 monthly right before that- I knew exactly how to stretch my dollar. I appreciate the recipes! I never was one to be creative as you are with your recipes- but I can see it makes the entire process of cooking and eating and cleaning so much more fun. Gonna try the oatmeal pancakes!

I am a huge fan of grounding! When my middle kiddo was little (3-7 yrs old), she would tell me the only thing that made her feel better when she was sick was laying face-down in the yard. This was before I had ever heard of grounding. It totally makes sense now lol.

Lol. 🥰 I totally agree that time immersed in nature and in contact with soil for feet and our hands in it , has huge benefits. Maybe even more so for kids that have any diagnosis, like mine. My favorite breakfast is 1/4-1/2 cup Cottage Cheese , 1/2 Banana, 1/2 of an Avocado, a good dollap of any Salsa though I prefer Black Bean Salsa, and a 1/4 teaspoon of Smooth Peanut Butter mixed together. That and a cup of coffee with Soy Milk keep me full for hours. Maybe not the least expensive breakfast but my nutritionist agreed is packed with protein, fruit, vitamins and minerals. This is a staple breakfast for me.
I do like Oatmeal with fruit and keep it in my prepping pantry. I love it with PB and Banana.

Not sure what peanut butter is like in the US but in Australia all the cheaper brands of peanut butter have salt and sugar added. Some even have vegetable oil.
I only buy fresh peanut butter that is made at the health food shop while I wait. It's definitely not cheap (about $8 a jar) but absolutely worth it.

Over the years, I have learned to accept that I am laaaazy. My favorite way to eat potatoes: microwave some mixed frozen veggies (I use Costco carrot, broccoli, cauliflower), Instantpot potatoes, add that to the bowl and mash/cut a little, ground flaxseed or hemp hearts, and a little of my favorite current sauce (atm it's Costco's no dairy buffalo sauce). Delicious! And eating a 50/50 plate (50% non starchy veggies, 50% starch-potatoes, McDougall's maximum weightloss) has helped me lose weight even while I'm full! 😍

For breastfeeding, my staples have been oatmeal, peanut butter, and bananas. I make a delicious breakfast with these 3 ingredients every morning! (Plus a bit of cinnamon.) And they are super cheap so I eat about 2 servings lol. I also add 1 extra snack in throughout the day in addition to what I make for the rest of the family. Something that is pretty high in calories, like avocado toast or even just a banana with peanut butter. I haven't had an issue with my milk supply and am still about 20lbs over my pre-pregnancy weight so ... its working? And, of course, drinking lots of water.
