Potato salad with ariori (garlic and olive oil) sauce
Potato salad with addictive new garlic flavor
■ Ingredients for 4 people
・ 3-4 potatoes (about 400g)
・ 1 egg yolk
・ 2 pieces of garlic
・ Olive oil (salad oil) 100 ml
・ 4 anchovy fillets
・ Grain mustard 1 tbsp
・ 1/4 lemon juice
・ Appropriate amount of salt
・ Pepper appropriate amount
■ Recipe
① Wrap the potatoes with the skin and heat them in the microwave for 5 to 6 minutes at 600W until the bamboo skewers pass smoothly.
② Cut the potatoes into bite-sized pieces with the skin and transfer to a bowl.
③ In another bowl, add grated garlic, lemon juice, a pinch of salt and egg yolk and mix well.
④ Add olive oil little by little and mix well with a whisk each time.
⑤ Add chopped anchovies and grain mustard to ④ and mix quickly.
⑥ Add the sauce of ⑤ to potatoes, fry quickly in a frying pan, remove the spiciness of garlic, and season with salt and pepper.
⑦ Serve on a plate and sprinkle plenty of Italian parsley to finish.
You can enjoy it deliciously even if you cool it in the refrigerator.
