Chocolate Lava Cake by BM In a blender place the following items & blend: ~ 1 1/2 cups of frozen cauliflower (defrosted to blend more easily - she used a microwave) 1 cup oats 1 very ripe banana ~ 1 tbsp each of chocolate powder & PB powder 1 tsp vanilla baking powder (looked like 1 tsp) 1 cup water or plant milk 1 tbsp chia seeds (acts like a chia egg) optional add-ins: dates or maple syrup (or something like stevia) if you want it sweeter, silken tofu or chickpeas (she would normally add but she was out of both) Pour it into a bowl and garnish with blueberries. She placed the bowl in the microwave to bake it, "for a few minutes if you want it on the softer side or up to 6-8 minutes if you want it more cakey."

Berries at the bottom, then a pudding on top made with 2 persimmons, cocoa powder, vanilla, miso & PB2. You blend the pudding ingredients. Quantities or instructions weren't given except for the persimmons. Hope this helps.

(Then remove the lid to evaporate the excess water & make sure the potatoes are cooked thoroughly.) Use about 1/3 of a block of tofu & chop it small to look like "tiny baby croutons". Sprinkle bouillon powder on the tofu cubes & she usually uses nutritional yeast but she's out of it. Pop it in the air fryer. On the other side of her air fryer, she placed the seitan & cooked them together for ~ 5-10 minutes (depending on temp). In a bowl place some leafy greens. Top the greens with oil-free hummus (can be thinned out with lemon juice) & stir it in (this is the dressing). Add the cooked veggies to the leafy greens. Then add the tofu & seitan, then top the bowl with cherry tomatoes, chopped pickles & sauerkraut. Add some more hummus & Everything but the Bagel seasoning.

Have you tried dried persimmons? It's the season for persimmons where I live and I just started using them inside of dates. But dried persimmons are also common here and I think they offer the same kind of gooey sweetness that medjool dates do. Give them a whirl if you can find them where you are!
I know you don’t count calories, but how many are in that epic bowl w the tofu and seitan? I love the idea of volume eating but totally afraid it would backfire on me.

So the first one is basically like a smoothie that you bake? I would try that. Your second meal seems like a sloppy mess and I wouldn’t like that. Too many different flavors, more like different meals, thrown together and you went to the trouble of making crispy tofu and seitan but then threw all that wet food on top. Defeats the purpose of making it crispy.
The breakfast cake looks amazing but I won’t microwave my food….why destroy the vitamins and expose yourself to more “waves” of any kind with all we have to deal with daily….I’ll bake it in the convection oven…. You won't get omega3s if you cook chia seeds or even if you grind them until they're warm in the blender.
