Hamburgers* I am a fourth generation butcher and our family doesn't make hot dogs because from what my uncles and father have told me is that there is more steps involved and we don't prefer the taste of hot dogs compared to sausage and bratwurst. The difference between the two that we make is that sausages and brats have single grind meats in them (for us its trimmings of pork loins, shoulder, and pork butt) and we put it in sheep casing (the lining of the intestines) and then we do a single grind with spices depending if we want it to be sweet, spicy or savory typically with sage, peprika, salt, pepper, crushed red pepper and a few other spices that depend on who is making it. Hot dogs on the other end has many things that can go into it, but some hot dogs can be solid pressed into its shape without casings and maintain their shape from thickening agents typically cartilage renderings. Some hot dogs are still served with casings and those are the ones you want. This is the snap that nick was talking about. Our family prefers Sahlen's Hot Dogs. As for Hamburgers It is up to the person who cooks it on the end result. But I would recommend 85/15 Hamburger. If the fat content is too low then your burger is too dry, If the fat content is to high then you are wasting your money because the fat will cook out and you will have a quarter sized patty. As for spices i would suggest to use the typical Salt and pepper. Garlic powder if you are into that and do it the night before you have your cook out and cook it on a medium heat and slowly bring up the internal heat and finish with a slight sear on the hot end of the grill.
