I followed the video. However, when the plane was loaded, it was not dark with lights and avionics display on. The engines were off all right. Any suggestions?

Make sure your apu bleed is on, its very important :)

I'm not too sure on that one... sounds like a bug to me! Make sure you have fuel in your tanks first of all haha
is msfs checklist also accurate for the a320,it might come in handy if i forget the steps?

How can I start the flight with everything completely off? My engines are already started but I want to do it myself.
You need to start you flight at the gate, so when loading the sim, press the zoom into details at the airport and choose a gate to load at

Why don't you use a32nx? its wayyy more realistic than the mfs one
