    The Zwilling Twin Four Star II is Zwilling’s modern take on their flagship Twin Four Star II line. The main difference comes in the handle, which is a wrapped, form fitted plastic with a contemporary design. The knife is made of 57 hardness steel and ground down to a very sharp 15 degree cutting angle. As always, each of the knives come with a lifetime warranty.
    The Miyabi Kaizen is, interestingly enough, Miyabi’s “entry-level” knife line. However, when you compare it to other knives, it is most definitely “top-tier.” The knives are completely and totally made by hand using VG10 steel clad with 32 layers on either side, and are then hand-sharpened to an insane 9 degree cutting angle. The handles are made of micarta and have a gorgeous mosaic pin in the center.
