A Netflix Nerd Girl Okay, now I'm curious, how do you temper your eggs when you make carbonara then? That is more or less the basic process I've always seen people use, and how I learned too. Just add in a bit of the hot pasta water to your egg/cheese mix and gently whisk to combine. I want to try your technique now!

Just made this today in my Rachel Ray pan! Turned out great!
I make this too. My method:
Crack whole eggs into a bowl, whites too.
Put pecorino (only pecorino) and (cooked) pork into the bowl.
Season sauce with black pepper.
Put the just cooked pasta into the bowl and stir to mix everything.
If it's too thick put a little of the pasta water in. Taste if it needs salt after.
Boom done. Plate it up and enjoy! Ez pz and delicious.
You need to cook the pancetta first, otherwise you'll eat chunks of raw pancetta...

Ofcourse, but in the US is probably easier to find smoked pancetta rather than guanciale.

I love the guy like no other, I'm a huge fan, but the man is giving me anxiety watching him trying to keep up with Rachel Ray (and I've noticed this in other cooking episodes) when he obviously has absolutely no experience in cooking. I understand that he is learning to cook through these videos, but come on just teach him some rudimentary cooking stuff so it isn't so overwhelming for him.
