The Dunes Trail would definitely not be your choice if you don't like full sun. The Lakeshore Trail was quite nice with views of Lake Ontario and the southern loop is mostly tree-covered. The Cedar Sands trail is quite well covered through a cedar forest with views of the river, although maybe not as interesting as the Lakeshore Trail. There are a couple of other trails in the park that I didn't try out too

I know people love to go there for the beach, but for me the scenery on the trails is the main attraction. The Dunes Trail is really cool

I can see why this park is busy in the summer, and thanks for sharing that Merlin app - I'll certainly be checking that out!
The Merlin app is amazing - such a lot of fun to see what birds are around. It has made me so much more aware of the variety of birds nearby
