You can use corn or potato starch for the gravy. Corn starch will turn watery fast as you start eating & it seems he's using potato or tapioca starch from this video.

味もさる事ながらボリュームもあり本当に大満足でした

I believe the sauce used is similar to a Tenshinhan, you could probably search it up for its sauce as a guide to start!

高校の時偶然立ち寄った老舗。大将も女将も70代。注文したカツ丼は、汁を吸い込んだ玉葱と（溶きではない）半熟一歩手前の卵。私は、これより美味しいお店を未だに知りません……。

Gravy usual seasonings are oyster sauce, light and dark soy sauce, chinese cooking wines, pepper, sugar, garlic, ginger
