So if you're going to build your gatehouse in front of AI gatehouse and prevent the food income you're taking the monopoly right for food trade in that city. And what is monopoly if not the finest of the long lived trade traditions? It provides so much freedom of choice, they can buy your food or they can not. In the latter case they can be looted several days after they didn't... Supply and demand. And want to know the best part? It's not considered contraband! And more importantly, no one tries o fight off their food addiction for long... at least successfully;) Yes, I doubt Kenshi is THAT realistic in it's mechanics, but I'd say that causing a siege of the whole region and ruling it through control of provision is something any bandit would dream of as their final goal, something that set apart a bandit and a... ruler?
There's a couple of mods that let you produce water in cities. If you have that, and research hidroponics or get a mod for roof farms, you can plant hemp inside a united cities city, then make the hash and sell it right there under their noses.
Slaves while would be best for character and story are just terrible compared to an "indentured" servant(aka using the recruit prisoners mod). Slaves have to watched over and if you are attacked they cant be counted on defence. Best just recruit cannon fodder and turn them into drug makers.
I like to make my prisoners slaves, but since slaves are broken i make them slaves and then have them join my group but keep the chains and the slave title ;)

It's the best NU/price and one can easily bait creatures into town gates to have them slaughtered and get their meats. In the UC desert cities for instance, even though garru herds are by default passive, if you have a good runner, and you aggroed the leader of the pack(the one with "patrolling" as their main goal) and then lead them into the city gate, the guards will wollop their arses, and one can easily get enough food to feed their men for days. One human in kenshi eats roughly 3 dried meat per day(40 NU to be exact).

By the time one gets to tier 3 research, they probably have a decent income source from crafting items or something. Otherwise earlygame one can train attack by using another faction's dummies(most likely illegally). Best dummies to use are the one above the barracks in Drin, there's 7 dummies, place has lots of HN attacking, for easy loot, and once the 2 cages there are filled, samurai don't really patrol the upstairs, even if they do, they don't stay long and simply leaving your guys on stealth while training is enough. Still though, lvl 15 ain't shit. Most you could do would kill some wolves or goats if you outnumber them...
I love the way, when you add your story to game without plot! And I think that game have a lot of possiblity to do in illegal stuff. Maybe in the next episode you will assassinate someone important, like chief of town, or some hight priest? That is a chalange!

Why don't you use Players Slavery mod? It lets you have slaves.

Use training stations to get your boyz on good attack level.
