Japchae is my FAVORITE Korean food. I introduced my daughter to it and it became her favorite comfort food. She died later that year. 💔 I now always eat Japchae on her birthday and the day she died. Aaron and Claire, you both would be so proud of me. I made Japchae for my cousin's that never had Korean food before. And it was a big hit, everyone loved it. But I only made it with the veggies because I have a bad allergy to pork. After everyone eat, there was only enough left over for me to eat later. I hosted an exchange student from South Korean that we still keep in touch with and I sent her a picture and she was like oh wow mom it looks just like how they make Japchae here in Korean. As you may have figured it out, it was a big success, I made a big Dutch oven full of japchae and by the time everyone was done eating dinner, HA! There wasn’t anything left. Hey, the video was good and easy to follow. I first stir-fried extra firm tofu chunks, adding green onions and sesame oil for flavor. Everything after that was exactly according to recipe (except no MSG, of course) I did all this in 17 minutes (tofu/veggies prepped beforehand). Yum- yum -- my quick go to for lunch at work!

I can’t express my thanks enough! I’m a novice to Korean food and “spicy intolerant” 😂 But like you said, you want to please and surprise your spouse. I was very intimidated with the glass noodles and they had set in my pantry. I followed everything you said and just doubled the recipe and got creative with the veggies (sorry ❤). He absolutely LOVED it!!! Been a viewer for a long time and can happily report that your recipes are easy to follow and turn out delicious 🤩 Thank you SO very much!

I see that this dish is so simple yet easy to cook, but I was wondering what can be replaced of the sauce.. 🤔 I dun eat meat and I like veggies more than anything else... 🤤🤤🤤 Once I had japchae at a korean restaurant and I immediately fell in love with the taste, lots of veggies and meatless, it was so yummy but quite expensive. We are so happy, since we have an asian supermarket, a big one too, right around the corner! We can get everything and it's soooooo delicious! I enjoy the cuisine from so many countries but Asia in total is my favorite. Well, at least most Chinese, Japanese and/or South-Korean dishes that I've learned. I wanna trie some summer-rolls and/or Thai curries too. Only sad thing is that I can't eat Coreander (Celantro) since I have "that" gene... tastes like soap for me :( All your recipes are super simple, super easy and downright delicious! Made this today. I was slightly oily. Didn’t have carrots at all. But, I found actual honest to goodness fresh gochu for the first time in my life and added that. And I sliced green onion because I know Aaron… only to find out for once. Still, great stuff!!!

I've used the Taiwanese mung bean noodles (bean thread ) as a substitute for the japchae noodles, and it worked out well.
This looks so delicious and I can't wait to give it a try. Yum!

For japchae, we need to use lean cuts. Beef tenderloin will work great in this recipe! 😁👍
