Great video. Your running commentary made it for me. Extra credit for going the whole road and sacrificing a tea towel to the cause. I keep mine for this use only and it is used yearly. When I started baking over 50 years ago, fruitcake recipes almost always said something about “line your pan with brown paper and grease well.” Before plastic bags, brown paper bags were ubiquitous for shopping and used in numerous ways from gardening to Halloween costumes. Since parchment paper was not widely used, we cut paper bags for lining baking pans and these worked well for a heavy, sticky block of gold like holiday fruitcake.
Hi Louie! The sacrificial tea towel hehe! That makes sense about the paper bags. Hope you enjoy your fruit cake this year and have a beautiful holiday season!
Thank you for sharing "kitchen reality", what we all deal with at home! Even though Christmas is just a month away ... I'm making this right now! Wishing you the very best of fortune with your baby's delivery.
cheese cloth instead of tea towel. grease pan then line with paper and grease again makes it easier to remove. I do really love it as you refer to the cake as "her".
That's such a great tip, thanks for sharing! For me, I spray and line a 10-inch tube pan with parchment paper. A non-removable bottomed tube pan works best. Bonus points for nonstick. Happy baking!
Looks delicious - Imma try this in a few weeks, thanks Chef LF! One question please - when you store the cake for a month each time, WHERE / HOW should you store store in? Thanks a lot!
Please do! Store alcohol soaked fruit cake well-wrapped in plastic wrap at room temperature for up to 6 months. After one month it will begin to dry out if not re-soaked. Once done soaking, store the fruitcake well-wrapped in plastic wrap in the refrigerator or freezer. Report back on how it goes, and enjoy!
Hi! I would say that dried pineapple chopped would be better. The cake is already pretty moist, so adding more moisture from canned pineapple (even well drained) would be problematic. You can follow all the additional instructions in the blog post for storing the cake. If soaked with brandy, it will last at room temperature for several months. If not soaking, store it well wrapped in the freezer for the freshest results. ~Happy baking!
I'm sorry to laugh, but I could almost hear you wondering how many questions you were going to get about that cutout. Thank you for this video, it was a kick. Oh, and those pound coffee cans were just that, tin coffee cans that had a pound of coffee in them and were saved to bake fruitcake in. I'm pretty sure I'm old enough to be your mom, and those were what MY grandmother used.

Love it!
You have to flour and butter that tube pan... the flour keeps it sealed!
Bless your heart❣️

@@ChefLindseyFarr Thank you, very helpful.
You're very welcome! Can't wait to hear about it!@@rgarlinyc
I'm currently in the process of making 20 fruitcakes for family members, half with booze half without. I've found that 4×6 loaf pans are working well.

Can I use tin pineapple chopped to piece. Will the cake last long

I think you should wear an apron.
I do sometimes, depends on the day. I like to wear whatever I want in my home kitchen :)
