  • A flavourful kuzhambu made using eggplants. What stands out is the unique powder that is added to flavour this kuzhambu. Video has a recipe for that secret powder.

    Ingredients: Powder
    · Channa dal - 1 tsp
    · Urad dal - 2 tsp
    · Sesame seeds - 2 tbsp
    Ingredients: Kuzhambu
    · Turmeric powder - ½ tsp
    · Red chilly powder - 1 tsp
    · Sambar powder - 2 tbsp
    · Fenugreek seeds - ½ tsp
    · Red chillies - 2 nos
    · Shallots - 10 nos
    · Mustard seeds - 1 tsp
    · Urad dhal - 1 tsp
    · Tamarind - the size of med lemon diluted in 150 ml water
    · Eggplants - 6 nos
    Method:
    1. In a wok, dry roast ingredients are given under powder. Set aside to cool and grind to a fine/coarse powder.
    2. In a wok, heat Chekko sesame oil. Once hot, temper using fenugreek seeds, mustard seeds, red chillies, curry leaves.
    3. Add the shallots and salt. Saute till shallots soften.
    4. Add the eggplants, turmeric & red chilly powders and cook well.
    5. Add the tamarind juice, salt. Cover and cook till eggplants cook and the raw smell of the tamarind fades away.
    6. Once the raw smell goes away, add sambar powder and mix well.
    7. Add the roasted sesame & lentil powder to the kuzhambu.
    8. Add more water to alter the consistency of your choice.
    9. Garnish with more curry leaves and serve hot.
    10. Serve hot with rice/idly/dosai/ aapam/idiyappam

    If u add katti perungayam first for roasting it adds a great flavour. Also karuveppilai powdered at the end. I dry karuveppilai in the shade and powder it with or without red chilli and store it in fridge and add it to all vegetables or some Kuzhambu
