✅Ingredients
• 1 pound country sausage
• 1 medium yellow onion, diced
• 2 tablespoons butter
• 4 cloves minced garlic
• 4 cups low sodium chicken broth
• 2 cups half and half
• 2 pounds russet potatoes, diced
• 1 cup sour cream
• 1 teaspoon salt, or to taste
• ½ teaspoon black pepper
• ½ cup shredded cheddar cheese (optional)
• 1 tablespoon minced chives (optional)
✅Instructions
1️⃣ Heat a large soup pot over medium heat. Add in sausage and cook until browned, stirring occasionally. Use a slotted spoon to remove cooked sausage and set aside
2️⃣ Return pot to medium-high heat. Add in onion and sauté 7 minutes, until soft and translucent. Add in butter and garlic and stir until butter is melted.
3️⃣ Slowly pour in chicken broth and milk. Add in potato and bring to a simmer. Reduce the heat to medium-low and continue simmering until potatoes are soft and tender, about 15 minutes.
4️⃣ Once potatoes are tender, gently mash the potatoes but not too aggressively so that you can still have some texture and chunks of potatoes. Stir in sour cream and add in the cooked sausage. Season with salt and pepper to taste.
5️⃣ Serve hot topped with chives, and cheese and an additional dollop of sour cream.

What is country sausage?
🤔Hmmm, this is a different strategy. I’ve made this dish several times before. The potatoes would’ve been more flavorful and tender if she cooked them along with the onions and sausage & then added the milk. Also a little fresh thyme or rosemary gives the soup a nice earthy essence… plus the herbs smells really divine while cooking.
True, but a lot of these recipes are created to be easy enough for us novices to replicate. 😊
So, I cooked the sausage, then added the onions and garlic, then milk and broth. I don’t recommend. It came out like zuppa toscana, and not a creamy soup. Too much fat. I saved it by blending it all, but I won’t do it like that again!

Hmmm trying to think what veggie to substitute for the potatoes in this recipe. Would Cauliflower be weird?
It would be so weird… & probably wouldn’t hold up nicely in such heavy liquid.
