If you don't like kale, try Lacinato ("lah-chin-AH-to") instead. It's also known as Tuscan Kale and Dinosaur Kale, and it's very different. This is the "kale" used in most Italian soups that call for kale. I think you will be pleasantly surprised.

This is my favorite soup of theirs. I found a copycat recipe many years ago and have been making it ever since at least once a year. Basically the same way and same ingredients as yours. Second, you call for low-Sodium chicken broth, yet you add a teaspoon of salt. The math works out like this (I have a heart condition, and so I calculate Sodium all the time)... Your recipe with low-Sodium broths: One 32-ounce (4 servings) carton of Kitchen Basics Unsalted Chicken Stock + one 14.5-ounce can of Swanson Low-Sodium Chicken Broth + 1 teaspoon salt = (4 x 120 mg) + 1,000 mg + 2,325 mg = 3,805 mg Sodium Using full-Sodium chicken broth without adding more salt: One 32-ounce (4 servings) carton of Swanson Chicken Broth + one 14.5-ounce can of Swanson Chicken Broth = (4 x 860 mg) + 1,500 mg = 4,940 mg Sodium The difference is 4,940 mg - 3,805 mg = 1,135 mg That difference is less than one-half teaspoon of salt added to the entire cooking pot. Full-Sodium chicken broth is much more flavorful than low-Sodium versions, as it is an entirely different formulation of yeast extractives (the majority of flavor in packaged broths) that is hamstrung by the food chemist's restriction on salt. Were you aware of this objective difference when you formulated your recipe?

I've been making zuppa tuscana for 25 years. Easy, delicious, comforting, and cheap! I use Canadian bacon instead of bacon.
I just recently made this only I used hot sausage and 10 cloves of garlic. It was amazing.

Chop up your green stems , dry them out as a spice ! Add to soups stew anything, if quick cooking .soak in water first 👍

Chop the stems from the kale and saute them in a little oil (maybe some of the bacon fat) until tender and add them in too!
