- The cold weather makes it perfect for soup! I will be making an Olive Garden copycat soup Zuppa Toscana. Zuppa Toscana is one of the most popular soups at Olive Garden. This copycat recipe is an easy one to recreate at home.This is good hearty soup to keep you warm for the winter.

INGREDIENTS
1 1/2 to 2 lbs potatoes
1 lb mild Italian sausage
6 oz bacon
1 small onion
2 cloves garlic
8 cups low sodium chicken broth
6 to 8 oz bunndle of fresh kale
1 cup heavy cream
salt and pepper to taste
1 tsp crushed red pepper flakes - Развлечения
My family loves this soup. We are not crazy for kale so I substitute with spinach and add carrots.
If you don't like kale, try Lacinato ("lah-chin-AH-to") instead. It's also known as Tuscan Kale and Dinosaur Kale, and it's very different. This is the "kale" used in most Italian soups that call for kale. I think you will be pleasantly surprised.

This is litterally one of my favorite things to make when it gets cold! My family and I aren't really crazy about the fennel taste in Italian sausage so I use breakfast sausage instead, it's great!
I just recently made this only I used hot sausage and 10 cloves of garlic. It was amazing.
I've made copy cat zuppa toscana recipes before, this is by far the best one I tried. I was surprised by how fast it was -- I think i spent longer buying groceries! Thank you providing another great recipe!

I've been making zuppa tuscana for 25 years. Easy, delicious, comforting, and cheap! I use Canadian bacon instead of bacon.
My daughter makes this a lot. It’s a family favorite and she always shares it with me when she does. It’s delicious 😍
I made it just the way you described. Quick and easy. Fantastic results, if I say so myself. Only thing I add next time is a few more potatoes.

I love the chicken gnocchi soup at olive garten, but reading how everyone loves this i will have to try it. I will substitute spinach for the kale because kale interferes with my thyroid medicine. Thanks for the recipe.

This is my favorite soup of theirs. I found a copycat recipe many years ago and have been making it ever since at least once a year. Basically the same way and same ingredients as yours. I have seen different variations of it too. If you haven’t already you should do a lasagna soup recipe. It’s become my family’s favorite soup recipe and we have many 😊.

I recently had this at Olive Garden and it was horrible, weak, waterly with no flavor. I'm sure yours will be better.

Chop up your green stems , dry them out as a spice ! Add to soups stew anything, if quick cooking .soak in water first 👍
I just wanted to say thank you for sharing this recipe. I made this tonight for my husband and he absolutely loved it. I refuse to go to Olive Garden and pay outrageous prices for what they call soup and salad. Never in my old age have I ever seen a family size salad with one lousy tomato in it.
This has become a wintertime soup staple in our home.

Angelica, this looks delicious. Can you think of a non dairy substitute for the heavy cream? I would love to make this but have a few people in my family a dairy allergy.

Chop the stems from the kale and saute them in a little oil (maybe some of the bacon fat) until tender and add them in too!

Huh.... I've heard of this one, but never been to an Olive Garden, just looked and there are two in my State but they are roughly 360 miles away (no, I'm not in the little state next to Mexico) so I've never had the opportunity to eat there. But all your other recipes I've tried have been great so I'll give this one a try, thank you.

Would you please clarify two things for me?
First, you are using low-Sodium chicken broth, but you say "I'm going to be adding water to make up for that." Make up for what, exactly?
Second, you call for low-Sodium chicken broth, yet you add a teaspoon of salt. The math works out like this (I have a heart condition, and so I calculate Sodium all the time)...
Your recipe with low-Sodium broths:
One 32-ounce (4 servings) carton of Kitchen Basics Unsalted Chicken Stock + one 14.5-ounce can of Swanson Low-Sodium Chicken Broth + 1 teaspoon salt =
(4 x 120 mg) + 1,000 mg + 2,325 mg = 3,805 mg Sodium
Using full-Sodium chicken broth without adding more salt:
One 32-ounce (4 servings) carton of Swanson Chicken Broth + one 14.5-ounce can of Swanson Chicken Broth =
(4 x 860 mg) + 1,500 mg = 4,940 mg Sodium
The difference is 4,940 mg - 3,805 mg = 1,135 mg
That difference is less than one-half teaspoon of salt added to the entire cooking pot.
Full-Sodium chicken broth is much more flavorful than low-Sodium versions, as it is an entirely different formulation of yeast extractives (the majority of flavor in packaged broths) that is hamstrung by the food chemist's restriction on salt.
Were you aware of this objective difference when you formulated your recipe?
You definitely should not have added all that water!
