For the sponge
1 + ½ cups (180g) all purpose flour (maida)
1 teaspoon (4g) baking powder
1 cup (285g) yogurt
½ teaspoon (3g) baking soda
¾ cup (150g) castor sugar
½ cup (120mL) vegetable oil
1 teaspoon (5mL) Vanilla Extract
For milk mixture
1½ cups milk
½ cup condensed milk
¾ cup heavy cream
½ tsp cardamom
7-8 strands of saffron
For garnish
Whipped cream

When two great things come together, it’s the best of both worlds. Like rasmalai and tres leches? Yes. Like you and your partner baking this dessert together? Yes yes yes! We’ve taken this Rasmalai Tres Leches Cake recipe from a one-person job to a two-person party, so that you and your sweetie can do a lot less work and have a lot more fun, together. Because when it’s made by two, you get to make the food and some memories, too! Sweeeeet!*
Cooking time with your better half: 1 hour
Chef 1:
Ingredients:
For the sponge
1 + ½ cups (180g) all-purpose flour (maida)
1 teaspoon (4g) baking powder
1 cup (285g) yoghurt
½ teaspoon (3g) baking soda
¾ cup (150g) castor sugar
½ cup (120mL) vegetable oil
1 teaspoon (5mL) Vanilla Extract
Procedure:
Combine the curd and baking soda. Mix well and set aside for 5 minutes.
Combine the vegetable oil and the superfine sugar in a large bowl. Using a whisk, mix well to ensure that you incorporate a lot of air for a light and fluffy cake.
Add the curd mixture and mix well.
Add a splash of vanilla extract to the mix.
Sift the All-purpose flour and baking powder into a large bowl.
Gently fold the dry ingredients into the wet mixture to create a smooth batter.
Line a baking pan with parchment paper and fill up the mixture.
Bake the cake for 30 minutes at 180 C or until a skewer inserted in the centre comes out clean.
While the cake is baking, don’t forget to check on chef 2 for a helping hand!
Chef 2:
Ingredients:
For milk mixture
1½ cups milk
½ cup condensed milk
¾ cup heavy cream
½ tsp cardamom
7-8 strands of saffron
For garnish
Whipped cream
Chopped pistachios
Procedure:
Add the warm milk into a large bowl. Mix in the saffron and cardamom powder.
Add in the heavy cream and condensed milk and stir the mixture well.
Once the cake is baked and ready, take a fork and poke holes across the entire surface of the cake.
While the cake is still warm, pour in the milk mixture in batches and allow the cake to absorb it.
Place the cake in the fridge for an hour, until the mixture is well absorbed. Maybe while away the time by sharing an extra spoon of leftover condensed milk with chef 1.
Garnish the cake with whipped cream and pistachios. Your Rasmalai Tres Leches cake is best enjoyed with your better half.

Made this yesterday for my mom's birthday and it was a huge hit! I ended up having alot of extra of the cream mixture so I let the leftover sit with it overnight and I swear the cake was even more tasty the next day! Such a quick and simple recipe, I changed the milk and used skim milk and added less sugar for some members of my fam.
