Thank you Sir! I have not missed any episode that has aired from any of your broadcasts. I have always been in in the state of mind that would I even consider eating that never mind paying for it. I am enjoying my retirement just cooking great food and not a one of my guinea pigs has ever complained or been poisoned. I love the attitude and the laughter you provide me, I have the same attitude and want to choke the living shit out of these places you have tried to save that have the most disgusting dirty and health hazard conditions. I have a decent sized kitchen for a 1 bedroom flat but I still keep it spotless always have, An old colleaque of mine stated to the other fellows at work that I had a hospital clean bathroom and the rest of y suite looked as though I had a maid in twice a week, I still live by standards to this day. Leaves me shaking my head as to how anyone could serve that garbage you found in some of those places to anyone. I have been doing all the cooking throughout my lifetime and in 2005 I had suffered enough injuries that I was forced into retirement so I found that learning from you and having a fucking gut wrenching laugh at the same time was a great way to spend my time. At least 3 times a week for the last couple years I have been cooking dinners for a senior couple that used to be my neighbors, they have had it difficult with their health especially Amil as the nurse comes twice a day to measure his functions and Sharon has had both knees replaced and has difficulty just getting around so I try and make her life a little easier by taking up the a good share of the cooking. I suffered a bad fall with our first blizzard of Nov. 2021 breaking my arm, snapping my wrist, cracking 3 ribs and messing up the knee I had two total knee replacements on since Sept. 2018 but I am healed up enough that I am back at it and was able to take them dinner once again last night. I made a batch of clarified butter this evening and my stock pot is simmering with vegetables for broth as I type this. Thank You Chef for making my retirement full of laughter and knowledge of the rights and the wrongs of preparing good food, My guinea pigs thank you as well. Many safe journeys from Canada.
@Ryanman18 You obviously read all of it Right! I made his french onion soup last night with a few modifications and it's great! You can't stop tasting it while it was cooking and the aroma was fantastic. As a Matter of fact I am just on my way out to drop it off with the seniors I make dinner for a lot every week. They are looking forward to the soup as they told me they haven't had french onion soup in over 15 years and it was at a restaurant but it wasn't very good. Mine is excellent! I also prepared an Italian pasta dish with hot Italian sausage, mushrooms , peppers, scallions in an alfredo sauce topped with mozza, Garlic toast topped with grated parmessano and a light sprinkle of fresh parsley. I enjoy cooking and when you are good at it everybody is more than happy to sit at the table Ryan. I also just came home from getting Cortisone injections to both hands and my legs and back are also shot to the point I need 4 -5 surgeries but because of this Covid crap I can't get even one of them!!! This is a labor of love and the folk's I make dinners for are in just as bad of shape if not worse so I do what ever I can to make their life a little easier. Chef Pierre and his methods of teaching make things a lot easier to make some fantastic dishes and I thank him for this.
