I did my initial first cook yesterday. I did hamburger frozen patties the very first time but did chicken quarters, wings, and mac n cheese for my actual real cook last night. Man it was delicious. Matter of fact I'm finna get some more now and it's 11:40 April 24th, 2021 Saturday morning lol 🤣🤣🤣

Great video that demo's the PBC. Is it really necessary to soak the wood chips?
The purpose of soaking the wood chips is to allow them to absorb a bit of the water. This means they will smoke for a longer time and produce more smoke. Some people say that soaking the wood chips is not necessary, yet others say it will definitely help, so decide for yourself. I figure it couldn't hunt, so why not? Thanks for watching!
So how do you baste? Briskets taste better when finished off with paper. Not sure hanging is the best for me.
You can remove the Brisket and wrap, then place back in the PBC on the grate to finish. As far as basting you can still spray the meat, but you have the advantage of juices dripping onto the hot coals and producing a flavorful steam that flavors the meat. Thanks for stopping by!
I really did like your video and just had some light suggestions for yourself as you, like myself, seem like you are always looking to improve. I feel that you should always make your own rubs and sauces as you can control the flavor as well as understand what they are doing to the meat. I feel that a dry rub is one of the most overlooked pieces of BBQ especially for ribs even though it is crucial for tenderness. Either way I loved the video and hopefully you will give it some thought. Happy BBQING :)

Can you do a review using lump wood charcoal,I don't think I could bring myself to using regular coals?
This was my very first cook using the Pit Barrel Cooker. They designed and tested it specifically using a common charcoal that is readily available almost everywhere. They picked Kingsford because it is the most popular charcoal available, and designed it to hold temperatures between 270-310 degrees using the Kingsford Blue charcoal.
With that being said their is no reason you cannot use lump wood charcoal, many people do in their Pit Barrel Cooker. Only thing I heard is that the lump wood charcoal typically burns faster and hotter than regular, so you might need to make some adjustments regarding cooking times and temperatures. It was the same batch of charcoal, I filled the basket completely. That usually guarantees at least 6 hours or so. I have a 3 year updated review of the PBC coming out in a few weeks, stay tuned. Thanks for watching!

i only really use mesquite, so is that a problem for the pit barrel
No, you can use whatever wood you would like. Some woods are lighter in smoke flavor, like Apple or Cherry, which typically is recommended for fish and chicken. Some woods have a much stronger flavor, like Hickory or Mesquite, so they are recommended for red meat. Use whatever wood you wood like, and feel free to experiment until you find the perfect one for you. Thanks for watching!

How did you keep coals to stay lit
Adjust the vent to your altitude, fill the basket with charcoals and lite it up. Not very complicated, and very easy. If your coals are not staying lit I would adjust your vent to allow more air. Thanks for watching.
