You simply set the bottom vent according to your elevation and the cooker handles the rest as long as you follow the rest of the instructions for coal lighting. If everything is done correctly it will run between 275 to 325°F for roughly 6 to 8 hours sometimes even more.

Ok so I'm not gonna ask about the ribs (although they looked great!) I am gonna ask all about the cooker. You only cooked to racks of ribs did you have to use a whole pan of charcoal and was that the whole bag? Does it have to be Kingsford briquettes? I use lump charcoal not briquettes and wanted to know if that may damage the cooker. How long did it hold the heat? I didn't see a thermometer so I would like to know what kind of heat it produces. Did that pan last you till next day? How did the rub taste? And do they sell more on the site? (I guess I could look but I wanted another question on this insane long post) And lastly, can you cook a pizza on it? (that is gonna be a hard one to answer since it looks like it is made solely for smoking and not baking) Great video and I look forward to seeing the nest one. Lol, Lurl! No problem! I will try to answer all of your questions here. First off? You can cook up to eight racks of ribs at one time and I’ve even heard of some guys doing 10. Pit barrel cooker company recommends Kingsford blue charcoal and so that’s what I have been using. You can use lump coal if you choose just keep in mind that lump coal will burn hotter. The charcoal basket is designed to be filled every time you use it in order to achieve and maintain temperatures. Typically, this cooker will run between 275 and 325° but there are variables to this so many in fact that I cannot list them all here. Mostly, it’s that people do not follow the instructions and therefore are on able to maintain that temperature range. As far as Pizza goes, my experience has been that Pizza likes to be cooked at high temperatures. Therefore, although I have not tried it yet, I would think there are probably better ways to do pizza. Both rubs that I used were absolutely outstanding and the pit barrel cooker all purpose rub can be purchased on their website. I hope I covered everything thanks for watching and commenting!

I have cooked a lot of ribs in my barrel and I never use a full basket of charcoal your just wasting it they cooked same temperature full of charcoal as they did with half a basket

Everyday BBQ my dad used charcoal and cherry wood as the smoke growing up during the summer.

Yes they recommend filling that for temperature purposes. I used around half if I remember correctly.

I’ve been experimenting with this and there’s definitely some truth to it. Haven’t found the exact right amount just yet.
