Hey I just seen this I'm late lol next time smoke it fat side up I usually rub it put it in the fridge overnight bring to room temp put on ur smoker fat cap up I spritz mine with apple juice keep around 225 to 250 when done wrap in tin foil like u did but then wrap in a beach towel and put in a empty cooler for 2 hrs give this a try tell me what u think eric

I know this question doesn't have much to do with the video but i'm taking that you don't have Sheba and Chloe anymore? I remember at one time you had to get rid of one of the dogs cause it bit your child at the time. Don't remember which dog that was but these two new dogs i don't recognize. But what happened to the other dog? They are beautiful animals.

Eric, looks delicious. As a kid, I remember my grandfather would cook chicken in an old steel refrigerator laid on its back. It was a strange contraption but it was some of the best BBQ chicken! This was 1980,s in Louisiana.

SMA does a terrific job making automotive videos - the best on RUclips. The transition into a cooking show is fun. Malcom has never done his prep on a stack of tires. Never seen that before, anyway. Maybe give Jacques Pepin a call.

One thing your viewers should know is that the thermometers are the key to success (on any BBQ or grill); especially with pork. And yes, I am a BIG TIME Thermoworks fan boy. (I have their 4-channel "Signals", and Thermapen ONE). Fast, and very accurate. Getting pork to just the right temp is key to getting good results. Their website has plenty of cooking advice for BBQ and grilling; I am always learning new stuff (including automotive repair at SMA!).
By the way, if you had lost part of that rack in the pit as you removed it, then you would definitely have needed to employ, "the classic reach-around". 😲

Noice. Hard to go wrong slow cooking over sweet smoke. I prefer my pork shoulder thick sliced rather than shredded. I know, I'm a heathen, but I like a hunk of meat on my sammy rather than a pile of fibers. Something I recommend trying is what I call southern style pork sandwiches. Smoked shoulder, a little of your preferred sauce, and a dollop of creamy coleslaw on top. Mmmm.
Love it! 5w 30 or 30w for the binder? Lol jk. But was reading an old old article of people using motor oil for cooking back before all the added chemicals and stuff... idk..

Getting a good external thermometer like that has been an absolute difference maker for me and my smoker. We did a brisket and a turkey breast last Christmas and it was sooooo good.
Just don't mix up the apple cider vinegar with the Fluid Film, and you're golden!

Always cook fat side up so in drains down through your meat. Fat is flavor.

Wow that pit barrel cooker is fantastic, I love that it's so basic that it makes me wonder why most of us don't get one to use, for pork sandwiches and ribs looked amazing. Yes I believe it would be a little rough eating ribs and sandwiches with braces. It's to bad that they don't have portable braces where you can loosen a couple screws and pullem' off for rib eaten' time. Oh well it was just a thought 🤔 Hope you all had fun, was a fun video Thanks 🐾👍

Check out the jacked jeep in the back ground at 1:48.... Gms are often at Eric's shop simply because they are a popular vehicle...Eric sorts them as can most other mechanics....it's just a numbers thing. All brands today are crap and have been since the 90's. Eric, that includes Jeep under Chrysler ownership in partnership with Fiat Renault, more recently Mahindra in India (I'd love to see you work on one of those 😅)
Jeeps are good. Gms are great. Ford is shocking at best today hence knowone buys them new....buy the last of the outgoing Toyota 4runner if you need a good truck. Piece out 🤘

Maybe you know this,maybe not.Spices are only oil soluable,so always pat dry,oil and then rub! Not saying you have to do it,but its a game changer. Also,if you ever struggle getting the silverskin(membrane) off the ribs,grab it with a dry paper towel!

I see you like to cover some recipe's and my family has a couple that are super winners. If you are interested in a bombastic bean and a fruit cake recipe that has been enhanced for 5 generations I would be glad to share them. I know, everybody hates fruitcake. Until they try this one. Good job pealing membrane off those ribs. I prefer to cook my butt fat side up. The melted fat helps baste the meat to keep it moist. Next time you spritz your meat with cider vinegar, throw in a little brown sugar, cracked pepper and red pepper flakes and you will have Carolina BBQ baste. You won't be sorry.
Pro tip: salt your pork at least 24 hours before smoking.

Go to Costco or Sam’s and get commercial aluminum foil. It’s wider and thicker. It’s a game changer.
You must smell interesting after a day like that. Grease, gas, and smoked pork, with a spritz of fluid film. PBC is a great cooker.

Jack Stack is good. If you can find it where you are I highly recommend Kansas city's own Gates BBQ sauce. It makes an awesome glaze on the ribs and chicken.

400 bucks for a converted 55 gallon drum is kinda pricey but I like the concept.

I'm a kinders hot and or sweet baby rays BBQ sauce guy for cow or pork, I like to use a more savory spicy sauce on chicken, I had one brand called like rub n tug or jerk off, it was some silly named stuff that was great, but I threw it away and don't remember the name now. I love eating bbq, just a pain to cook 10 hours sometimes.. I'd stay late to eat all that though, lol..

That appears to be the 22" Pit Barrel, not the 18.5". Where did you get the rack in your cooker? That does not look like the one that came with mine.

Cooking shoulders on a regular smoker we never wrap a shoulder it causes the rendered fat to pool up up around the meat. We will cover the meat to keep it from going black. You should try some of your neighbors bbq sauce. Dinosaur bbq in Syracuse NY. I like there Wango Tango habanero its not that hot its really good

Been smoking meats over 35 yrs and used the weber smoker for many years ( my son has it and is still working great. The Pit barrel I have used for just under 5 yrs when it just fell apart due to the heat and cold start. I moved on to the treager pellet smoker man what can I say you just set it at the temp and stick in your wireless probe in and forget it. Take a look at the bearded butchers they have great tip's on the meat's cut's to use and cooking with the Big green egg and the treager. When you get old and lazy you love the fact you don't use kingsford or and other brand of charcoal since it is made with chemicals to enhance the charcoal cooking time Lump coal s the way to go if using charcoal. The pellet's are all natural wood with different wood choices to cook with and Best of all you just make sure the hopper is full with your choice of pellet's and just turn it on and it's coming up to the temp you wanted. Just a Lazy way to smoke grill or what ever you want to cook.
