I've been diagnosed with Diabetes, Type 2, since I was 17 and I'm in my mid 60s now. Things have changed so much since I was first diagnosed, like how many carbs you can have for each meal and each snack and how many "hidden" carbohydrates are in things. I've learned that "clean eating" is the only way to go meaning no processed food crap. Following the ADA was my first mistake. It's actually too many recommended carbs (good carbs). I became "insulin resistant" and was on an insulin pump until I finally tried a Keto diet which changed my entire life 😊 I lost 100 lbs (and yes, type 2 diabetes with insulin resistance and insulin makes you gain weight) and then I was able to get rid of the insulin pump and my oral meds were cut in half 🎉 I am a testament to the Keto way of life and perhaps it could help someone else. ❤. Thanks for all you do.
I need to add something here ... Fruit is a complex carb as well as some veggies. That being said, it's all turned to sugar. We need some carbs to live and keep our bodies to do normal things. There is a balance in everything. Most people think of eating too much sugar makes a person diabetic. That's really not the cause; it's our pancreas not tending to what it does. Medicine does nothing but make us feel better, it doesn't stop the problem. Medicine is $$ for big pharma, not really helping to cure us.

Once upon a time I was a "good diabetic" too following recommended carbs-per-meal etc while my prescribed meds kept creeping up and the docs suspected I wasn't really being up-front of what I ate. It was confusing to me because I trusted them. I stopped reading the article after "canned pumpkin" was suggested. I realized this dietician wasn't writing for an actual T2D. It's not a bad article but it is not helpful to call "good" three items that will spike one's blood sugar up if a person is insulin resistant. I have embraced following Dennis Pollack's Beat Diabetes channel and really appreciate the way he hammers home to use "Mike the (Glucose) Meter" to equip us to understand how a meal affects us. I'm so happy to hear you were able to get rid of the insulin pump. Adopting a ketvore diet has been a Godsend for me as well.
@Woodsoe congrats! I started watching Dr Ken Berry 4 years ago, that man saved my life. I eat meat heavy keto, have lost 100 pounds and have kept it off. A1C is 4.9 CAC is zero, can't remember my cholesterol #s but they are in range as well. High BP is gone, aches pains gone. Friends have reversed their type 2 diabetes. I am so proud of you for the healing path you are on.
I recently heard that if you soak rice overnight before cooking it makes it "healthier". Or you can cook the day before , store in the fridge and eat the next day. Takes a bit of forward planning though!
I have had Type 1 Diabetes for 32 years, and beans are not good for my blood sugar levels. They are a tad high in carbohydrates, which break down into glucose and raise blood sugar. I still keep them in my food storage, I just cannot eat very much at once and add them to soups. Thank you for sharing so much varied information and caring about health along with storing food!
I have type 2 diabetes and cannot follow the "eat-beans-they-have-fiber" safely either. A dish with a satiating amount of beans for me would spike my blood sugar so high. I can eat beans but only a tablespoon or so. Just 'TIS. Makes me a little sad that folks still tout beans as "healthy". Wish they would carry a caveat "If you do not have insulin resistance".
If you're diabetic, check the labels on thise canned veggies! A number have added sugar in the form of high fructose corn syrup. Corn and tomatoes products of course but I've found it in carrots, and even 1 can/ product line of green beans.
I love that 80 is the new 60. I am 62 and always trying to learn how to eat healthy little sugar little salt and carbs. im doing ok and learning more every day I'm trying to share this way of eating and thinking even if its a slow and a little to begin. at leaste going in the right direction is good. great video. I will share this info . Sardines are a great source of protien but many people dont care for them.

I have learned so much from you. As my hubby developed T2 diabetes after cancer, I have also learned it's all about carbs, carbs, carbs... That has been the key to succefully reversing his A1C to pre diabetes levels! Please no or very little regular corn, but baby corn is ok... green beans yes, brassicas yes, great northern beans are the lowest net carb dry beans. (Your green chile chicken canning in Weck 😋) Fruit as in berries ok but others, yikes!. We are thankful the "keto" diet came on the scene as those recipes have literally been a lifesavercfor us. Your scientific approach to food preservation has been a wonderful adjunct to my foray into the food science world of alternative ingredients and into low carb baking, which vegetables to choose, and in preserving techniques. I'm really glad you are doing this. I tried to tell you this when you had the major weight gain after you were making all the types of bread. I got slammed for it. Abdominal fat is indicative of insulin resistance. Research Berberine as well. That way, when a meal contains carbs, it helps to prevent a spike as does taking a brisk 10 to 15 minute walk after every meal. I hope it all works out for you.❤
Be careful of Berberine and interactions with prescription medications. One of the favorite blood pressure medications for prediabetics is Losartan. It reacts with Berberine.
@sherrywoody2142 I take 500 mg after dinner. I do not eat anything after dinner as berberine works best through the night. I would also take 500 mg during the day if I ate high carb meals to help keep my blood sugar from spiking. We live a low-carb diet 99% of the time as my husband is pre-diabetic.
Just turned 70, i was always told corn becomes a high sugar food thru digestion, so I avoid it as much as possible...I DONT have any diabetes and dont want to, lol Been watching you a LONG time, I only skip the videos on trail foods, we do not hike, love ur video's!
Yeah ...corn isn't great for diabetes. I will use a little bit in recipes mostly for color, but I need to stay away from full servings of corn. And most canned fruit, especially in syrup. Even light syrups. I need to mostly stick with berries when it comes to fruit. I know she meant well, but some of the examples are actually bad for diabetics. Especially the pumpkin waffles (pumpkin is okay tho, I have different recipes using it). Many people do not realize that it's not just sugar that raises blood glucose. It's also starchy carbs like flour! That's not to say that we can never have any, but we need to only have very small amounts. I'd be on a blood sugar roller coaster for many hours after eating a single waffle😟 Actually, it would be an interesting watch if she wore a continuous glucose monitor for even a week and watched how her blood sugar responds to different foods. She likes the science stuff so it could be fun, lol. It wouldn't mirror exactly what happens in a diabetic, but it should still be educational.
@Damselfly54315 in my daily diet, I was also told that corn and wheat both are processed and turn into bad cholesterol and elevate sugar levels. I've switched to gluten free foods and given up corn.
@tahursh637 any processed food are carbs=sugar fuel...vegetables that turn into sugar too! Some not quite as bad, but corn based products are only good for making heat in the body=inflammation

Canned fish, canned chicken do not affect my blood sugar much. Corn will raise my blood sugar. Tomatoes used sparingly is ok for me. Beans raise my blood sugar slowly but keep it high longer. Canned fruit is not good for me unless it is berries. I've not tested pumpkin. I react to carbs. Less so if there is more fiber. But the amount of carbs just takes longer if fiber is included. Thanks for addressing this.
I often make a salmon soufflé using both canned and fresh salmon. When we have some thin pieces of fresh salmon, I freeze then cook and cut into small pieces to add to the recipe. The fresh salmon in addition to the canned adds body and flavor to the soufflé. Absolutely delicious! Left over soufflé is excellent heated in the microwave. I have always cooked/ prepared meals for my family using salt, yet not a lot. My children never salted at the table. On a dr visit, one dtr had low blood pressure. Asked about salt usage, I was told to use more. Too little can be dangerous,as well!
You could tell that my mil was being overly careful on eating her salt - her dementia got worse. At the nursing home, they would sprinkle a little on her food before she got it.
I can't wait to try the pumpkin waffle recipe. We are from Vermont, so maple syrup is a staple for us. It is very low on the glycemic index, lower than honey, at 54. Ps You look fantastic!

Your waffles look great. I got my waffle iron in 1989. It is still going strong. As a person of German decent I grew up making a vanilla sauce for a topping. 1/3 c sugar, 1 heaping tablespoons cornstarch. Mix well then add 1 cup milk and vanilla to taste. Slowly bring to a boil, whisking continuously. Once thickened it is ready to use. I top my waffles with this sauce, then add any canned fruit on hand. I have canned blueberries without sugar, so making a blueberry sauce is great. For a cup of canned blueberries I add about 1 tablespoons each of sugar and cornstarch. The juices from the canned berries thickens up nicely. Any leftover blueberries I have I add to plain yogurt. As a side note, my family likes their pancake syrup, so they add that to their waffles, in addition to the vanilla syrup and fruit. I don’t buy a lot of canned fruit. I can my own in a light syrup.
I know you said your a1c was normal, but thinking ahead for a sugar substitute perhaps a product called Whey Low D. You go to their website to learn about it. It won't raise blood sugar and can be used exactly like granulated sugar. It works well for canning. My experience with baking is that while it works it makes a drier, more crumbly product. A little spendy but a great product--and NO aftertaste. Thanks for sharing your investigative findings in this video. I've been non insulin dependent diabetic since 2009. Exercise is also an excellent help in managing diabetes.
Keeping wheat and excessive carbs out of our diet works best for my family's genetic background. There was a time where we ate wheat products but a cholesterol scare in my late thirties lead to a diet with no wheat, dairy, modern corn, soybeans, sugar, meat, vegetable oils, or fried foods. Since manufactured products contain these ingredients it saved a lot of money when we abstained. Dinner just now was roasted vegetables and chickpeas cooked with a little olive oil and black pepper. On a hot day this is an easily digestble meal. Yesterday we had salmon, a little quinoa, and a big salad with greens. We are in our 70s without signs of the metabolic diseases that are ubiquitous in my native population that eats modern foods. We eat a lot of canned fish packed without salt, plus canned tomatoes, green beans, and plain old greens.
There are several recipes on pinterest for chicken nuggets using a large can of chicken, 1 egg and 1/4 cup shredded cheese. Mix together and using an ice-cream scoop, make balls and flatten slightly. You can oven bake, air fry or cook on top of stove with a little olive oil (my fav).
Hi Pam & Jim. I cook for 2. A quick recipe for the canned chicken: 1 can chicken, drained 1 (303) can veg - all or your mixed veggies 1 can cream of chicken soup 1/2 c. Milk. Mix together and toss into a casserole dish. Top with biscuits for a quick Chicken Pot Pie. Be safe, Be prepared, Be Blessed
My A1C has been great for many years. I decided to wear a CGM (Dexcom G7) on my own along with my endocrinologist. To my surprise, my blood sugar goes low (not enough to cause symptoms) and it went pretty high thus it averaging out to a NORMAL A1C which it was NOT. But with that said, my Dr. had come to the conclusion that I AM pre diabetic. So now I wear my CGM daily and eat accordingly to it. I have dropped a lot of weight and feel so much better than I did. I didn’t know I felt bad. It was like having a thorn taken out of your foot that you had for years and don’t realize how great it feels once it’s out. But my Dr. said that so many are walking around with pre diabetes or diabetes due to their daily highs and lows balancing out. I tell everyone I come across to try wearing a CGM (continuous glucose monitor) as many will be shocked. If I can help just 1 person then I will be happy. God bless everyone. 🙏
Pumpkin waffles look amazing! Have to try this. Organic Maple Syrup is a good source of minerals. Way better than syrup with gmo corn ingredients, and no pesticides.
I Found out that I was diabetic just before we left Idaho 10 years ago. I was sent to At. Luke's diabetic clinic to go through a learning group period. My Doctor put me on diabetic medication, but it made me very ill period. So I was taken off of it and for the last 10 years, I have controlled my diabetes by my diet. brought my A1C down from 8.2 to 5.7 I keep it that way. Corn is one thing that I was told in the clinic do not eat. It is a High starch. When you eat a potato, you can have a quarter of a large potato..... large potato, meaning it fits in your hand not those gigantic ones. I learned what I can and what I cannot eat and when you read a can it is the total carbohydrates, they are not to be broken down. If it has only got this much sugar, has this much starch etc IT is the entire carbohydrates. That's when I was taught. I rarely eat rice and when I do, it's two tablespoons. I eat no spaghetti at all and no more sandwiches. I think the thing is , is we just need to be careful. I eat sugar free fruit cocktail as a treat. Good luck and prayers. Thanks for all you do. I have learned that abstinence is easier than moderation. I love that you've been able to control your diabetes by your diet. That's my goal too but I'm still on oral meds for now. When I eat one of those tiny tomatoes, it tastes like candy to me. I enjoy stevia in my coffee in the morning. I will drink a Fresca or other diet soda occasionally. But for me, it's all about recalibrating my tastebuds to enjoy foods that don't spike my blood sugar.
I think after seeing some strong comments we need to remember she's talking about improving numbers, not Type 1 Diabetes restrictions which is an issue in itself. I'm thankful for her guidance and diligence, and they steer me to further research for my own needs.You both rock!

I know from experience that if you eliminate flour and sugar all of your 'numbers' should improve and aids greatly in losing weight. It's not easy for bread/pasta lovers but it works. Once things are under control after several months you can try adding some back in.

Pam, if you like maple syrup, try Lakanto syrup, either alone or cut the maple syrup. It tastes very good, and supposedly doesn’t spike blood sugar as it’s made from monk fruit. I was surprised at how good it tastes and it is about the same price as a decent maple syrup. Wishing you the best on your health journey
Sorry I missed this when it came out.I will try the recipe in my small dash.I have made waffel french toast, egg salad ,tuna salad ,chicken salad sandwitches,peanut butter and preserve sandwitch.with just scrambled egg.The crannies help prevent slipage.I also use add in like hemp hearts and chia seeds.

FYI: I think you're correct about 80 being the new 60, as I thought that was your age. I'll be 88 the end of September and didn't really start feeling my age until the beginning of 2023. Hopefully, by focusing more on the foods you've suggested will help slow it down, as my aim is to reach at least 100. 😄
My mom was a surgical diabetes. So became aware of the need for canning for diabetes and other dietary needs. She would can fruit in unsweetened pineapple juice. I have tried sugar substitutes for jams. My favorite is monk fruit-which does not affect one's glycemic index. It is the most usable and I can't detect an aftertaste. My favorite no/low sugar pectin is Mrs Wages.
I really wish I didn't have the taste issue with monkfruit. I have a reaction to Splenda and Aspertame so I can't use those. I can use Stevia in small amounts.

Those waffles look, and sound amazing. One thing I stopped using, was vegetable oil. It’s very inflammatory. I use avocado 🥑 oil instead. Much healthier. I just thought, I’d pass that along, because I never knew either. Blessings from Northwest Washington State. 🙏😘
Corn and peas turn to starch , aka sugar. So when eating those 1/2 cup serving have the protein. My mom was a diabetic for 50 yrs. And I watch what I eat.
Rose my husband was so high in his A12. Down to nothing now. Diabetic to non diabetic. We did the carnivore diet. All the meat and eggs and butter and heavy cream you want. No sugar. Stevia if you want sugar type. No bread. Several friends went on this after issues. Cheat on holidays. He went from 190 pounds to 135 in 7 weeks. Felt great. Can consume alcohol just nothing sweet no beer but scotch whiskey etc. he lost the belly looks so good. From a 40 waist to 32. Fyi
I am so enjoying canning. Every time I go to town I come home with a few more jars. I was so lucky to find an old canner on face book at a very good price, I may on-sell my newer one soon as I prefer the older presto one.
I just started to Prep and I found your channel. I’ve been watching a lot of your videos and thank you for sharing your knowledge. My question is my wife and I were at Good Will yesterday and I found some 1/2 pint jar. I purchased two of them, brought them home and wash the jar in hot soapy water water along with the lids and a ring, boil the lids and ring for twenty minutes and put the jars in the dishwasher and dried them in the over at 225 degrees for 20 minutes do you think there are safe to use…. Thank. Bill
They should be fine. But before using them, check with nchfp.uga.edu (USDA Complete Guide to Home Canning, Guide 1) for continued use and care of jars and lids. Jim
2 cups pumpkin, 2 cups self rising flour, pinch of salt ( other seasonings ie if wanted nutmeg, allspice…) this makes a dough…..pieces of dough flattened into flatbread, cook in skillet….great flatbread!!!!
Awesome Video. I had a diabetic Cat for 11 years stray (2) shots a day and testing of urine 3 times a day to know how much insulin was needed. I never in a million years thought I could do it, but I did and she had a good life. I cooked Turkey breast for her and mixed with Pumpkin and she scarfed it up. If she seemed off during a weekend I would add Pumpkin to her dry food just a little. I would take her levels and within an hour she was awesome. Thank you for all you do.
I'm glad to hear that your blood sugars are normal. I am a type 2 diabetic and on medication. I do take my blood sugar almost every day although it's not necessary. I want to know what my body can tolerate as far as food goes. So I monitor it. So far it's been the best way for me to stay with in my blood sugar range. Although some of your suggestions may not work for a true diabetic. I respect your advice on canned foods.
Pumpkin soup is delicious, too! Many recipes online for different varieties. And you could top those waffles with sugar free whipped cream... just add your favorite alternative for sweetener. I wonder how sugar free caramel syrup would taste on them, too. hmmm... I might have to give it a go, myself! I love your waffle maker. I have have two small personal sized ones. I think I'd rather get the one you have. I am making chaffles for my 13 year old Yorkipoo who had a pancreatitis attack and he's gone blind and become diabetic. It would be really helpful to cook a whole batch up like you've done here... Chaffles are a thing!! Spray the top and bottom of your waffle maker, mix up some shredded cheese/s of your choice, a meat, and egg and or a few veggies, top with cheese, and cook. SO yummy!! Of course you can add herbs and spices to your liking as well. :-) I have to say, retirement agrees with you. You look marvelous and so relaxed and happy. No stress across your face anymore.
Ms. Pam could you share the link for the article you are talking and if possible could you do more videos on this topic? I’ve been type 2 since I was 20. I’m 49 now and I’m still have trouble managing it. About a year ago, I finally was able to get my A1C down to 7.0.
Wonderful information!! Thank you so much! I do want to share with you about red meats. Red meat is good for us, if it is a leaner cut. My husband and I hunt, process and can our own venison. Canning it gives the meat it’s own, unique flavor that we love. It also tenderizes the toughest cuts, so no meat goes to waste. We also grind our own ground meat. Since venison is virtually fat free, I add 20% of quality beef fat. And we are able to save the healthiest cuts of all - the heart and liver. Gently fried in a non-stick skillet with a Tbsp of canola oil and sliced onions, they are favorite dishes! I hope you will one day have the opportunity to try some canned venison. I have type 2 diabetes and cannot follow the "eat-beans-they-have-fiber" safely either. A dish with a satiating amount of beans for me would spike my blood sugar so high. I can eat beans but only a tablespoon or so. Just 'TIS. Makes me a little sad that folks still tout beans as "healthy". Wish they would carry a caveat "If you do not have insulin resistance".
I’m diabetic and find canning green beans, beef with onions and plain chicken or chicken, veggie soup to be great for me. I do very low carb.
If you're diabetic, check the labels on thise canned veggies! A number have added sugar in the form of high fructose corn syrup. Corn and tomatoes products of course but I've found it in carrots, and even 1 can/ product line of green beans.

I am 62 and always trying to learn how to eat healthy little sugar little salt and carbs. im doing ok and learning more every day I'm trying to share this way of eating and thinking even if its a slow and a little to begin. at leaste going in the right direction is good. great video. I will share this info . Sardines are a great source of protien but many people dont care for them.

I have learned so much from you. As my hubby developed T2 diabetes after cancer, I have also learned it's all about carbs, carbs, carbs... That has been the key to succefully reversing his A1C to pre diabetes levels! Please no or very little regular corn, but baby corn is ok... green beans yes, brassicas yes, great northern beans are the lowest net carb dry beans. (Your green chile chicken canning in Weck 😋) Fruit as in berries ok but others, yikes!. We are thankful the "keto" diet came on the scene as those recipes have literally been a lifesavercfor us. Your scientific approach to food preservation has been a wonderful adjunct to my foray into the food science world of alternative ingredients and into low carb baking, which vegetables to choose, and in preserving techniques. I'm really glad you are doing this. I tried to tell you this when you had the major weight gain after you were making all the types of bread. I got slammed for it. Abdominal fat is indicative of insulin resistance. Research Berberine as well. That way, when a meal contains carbs, it helps to prevent a spike as does taking a brisk 10 to 15 minute walk after every meal. I hope it all works out for you.❤
Yes, you’re absolutely correct. Low GI foods and Berberine has helped me too.
Be careful of Berberine and interactions with prescription medications. One of the favorite blood pressure medications for prediabetics is Losartan. It reacts with Berberine.

@sherrywoody2142 I take 500 mg after dinner. I do not eat anything after dinner as berberine works best through the night. I would also take 500 mg during the day if I ate high carb meals to help keep my blood sugar from spiking. We live a low-carb diet 99% of the time as my husband is pre-diabetic.
Just turned 70, i was always told corn becomes a high sugar food thru digestion, so I avoid it as much as possible...I DONT have any diabetes and dont want to, lol

When I was diagnosed with diabetes one of the first things I gave up was corn. Now, I am no longer diabetic.
Yeah ...corn isn't great for diabetes. I will use a little bit in recipes mostly for color, but I need to stay away from full servings of corn. And most canned fruit, especially in syrup. Even light syrups. I need to mostly stick with berries when it comes to fruit.
I know she meant well, but some of the examples are actually bad for diabetics. Especially the pumpkin waffles (pumpkin is okay tho, I have different recipes using it). Many people do not realize that it's not just sugar that raises blood glucose. It's also starchy carbs like flour! That's not to say that we can never have any, but we need to only have very small amounts. I'd be on a blood sugar roller coaster for many hours after eating a single waffle😟
Actually, it would be an interesting watch if she wore a continuous glucose monitor for even a week and watched how her blood sugar responds to different foods. She likes the science stuff so it could be fun, lol. It wouldn't mirror exactly what happens in a diabetic, but it should still be educational.

@Damselfly54315 in my daily diet, I was also told that corn and wheat both are processed and turn into bad cholesterol and elevate sugar levels. I've switched to gluten free foods and given up corn.
@tahursh637 any processed food are carbs=sugar fuel...vegetables that turn into sugar too! Some not quite as bad, but corn based products are only good for making heat in the body=inflammation

Canned fish, canned chicken do not affect my blood sugar much.
Corn will raise my blood sugar.
Tomatoes used sparingly is ok for me.
Beans raise my blood sugar slowly but keep it high longer.
Canned fruit is not good for me unless it is berries.
I've not tested pumpkin.
I react to carbs. Less so if there is more fiber. But the amount of carbs just takes longer if fiber is included.

I often make a salmon soufflé using both canned and fresh salmon. When we have some thin pieces of fresh salmon, I freeze then cook and cut into small pieces to add to the recipe. The fresh salmon in addition to the canned adds body and flavor to the soufflé. Absolutely delicious! Left over soufflé is excellent heated in the microwave. I have always cooked/ prepared meals for my family using salt, yet not a lot. My children never salted at the table. On a dr visit, one dtr had low blood pressure. Asked about salt usage, I was told
to use more. Too

And iodized salt helps keep the thyroid healthy. There was a lot more incidence of goiter before the invention of iodized salt.
You could tell that my mil was being overly careful on eating her salt - her dementia got worse. At the nursing home, they would sprinkle a little on her food before she got it.
Happened to me with my child. I had to cook with more salt. Today, years later, she’s once again fighting LBP. Would that I had control.
I can't wait to try the pumpkin waffle recipe. We are from Vermont, so maple syrup is a staple for us. It is very low on the glycemic index, lower than honey, at 54.

Your waffles look great. I got my waffle iron in 1989. It is still going strong. As a person of German decent I grew up making a vanilla sauce for a topping. 1/3 c sugar, 1 heaping tablespoons cornstarch. Mix well then add 1 cup milk and vanilla to taste. Slowly bring to a boil, whisking continuously. Once thickened it is ready to use. I top my waffles with this sauce, then add any canned fruit on hand. I have canned blueberries without sugar, so making a blueberry sauce is great. For a cup of canned blueberries I add about 1 tablespoons each of sugar and cornstarch. The juices from the canned berries thickens up nicely. Any leftover blueberries I have I add to plain yogurt.
As a side note, my family likes their pancake syrup, so they add that to their waffles, in addition to the vanilla syrup and fruit.
I don’t buy a lot of canned fruit. I can my own in a light syrup.

I know you said your a1c was normal, but thinking ahead for a sugar substitute perhaps a product called Whey Low D. You go to their website to learn about it. It won't raise blood sugar and can be used exactly like granulated sugar. It works well for canning. My experience with baking is that while it works it makes a drier, more crumbly product. A little spendy but a great product--and NO aftertaste. Thanks for sharing your investigative findings in this video.
I've been non insulin dependent diabetic since 2009. Exercise is also an excellent help in managing diabetes.

Keeping wheat and excessive carbs out of our diet works best for my family's genetic background. There was a time where we ate wheat products but a cholesterol scare in my late thirties lead to a diet with no wheat, dairy, modern corn, soybeans, sugar, meat, vegetable oils, or fried foods. Since manufactured products contain these ingredients it saved a lot of money when we abstained. Dinner just now was roasted vegetables and chickpeas cooked with a little olive oil and black pepper. On a hot day this is an easily digestble meal.
Yesterday we had salmon, a little quinoa, and a big salad with greens. We are in our 70s without signs of the metabolic diseases that are ubiquitous in my native population that eats modern foods.
We eat a lot of canned fish packed without salt, plus canned tomatoes, green beans, and plain old greens.

There are several recipes on pinterest for chicken nuggets using a large can of chicken, 1 egg and 1/4 cup shredded cheese. Mix together and using an ice-cream scoop, make balls and flatten slightly. You can oven bake, air fry or cook on top of stove with a little olive oil (my fav).

I cook for 2. A quick recipe for the canned chicken:
1 can chicken, drained
1 (303) can veg - all or your mixed veggies
1 can cream of chicken soup
1/2 c. Milk.
Mix together and toss into a casserole dish. Top with biscuits for a quick Chicken Pot Pie.

My A1C has been great for many years. I decided to wear a CGM (Dexcom G7) on my own along with my endocrinologist. To my surprise, my blood sugar goes low (not enough to cause symptoms) and it went pretty high thus it averaging out to a NORMAL A1C which it was NOT. But with that said, my Dr. had come to the conclusion that I AM pre diabetic. So now I wear my CGM daily and eat accordingly to it. I have dropped a lot of weight and feel so much better than I did. I didn’t know I felt bad. It was like having a thorn taken out of your foot that you had for years and don’t realize how great it feels once it’s out. But my Dr. said that so many are walking around with pre diabetes or diabetes due to their daily highs and lows balancing out. I tell everyone I come across to try wearing a CGM (continuous glucose monitor) as many will be shocked. If I can help just 1 person then I will be happy. God bless everyone. 🙏

Pumpkin waffles look amazing! Have to try this. Organic Maple Syrup is a good source of minerals. Way better than syrup with gmo corn ingredients, and no pesticides.
I Found out that I was diabetic just before we left Idaho 10 years ago. I was sent to At. Luke's diabetic clinic to go through a learning group period. My Doctor put me on diabetic medication, but it made me very ill period. So I was taken off of it and for the last 10 years, I have controlled my diabetes by my diet. brought my A1C down from 8.2 to 5.7 I keep it that way. Corn is one thing that I was told in the clinic do not eat. It is a High starch. When you eat a potato, you can have a quarter of a large potato..... large potato, meaning it fits in your hand not those gigantic ones. I learned what I can and what I cannot eat and when you read a can it is the total carbohydrates, they are not to be broken down. If it has only got this much sugar, has this much starch etc IT is the entire carbohydrates. That's when I was taught.
I rarely eat rice and when I do, it's two tablespoons. I eat no spaghetti at all and no more sandwiches. I think the thing is , is we just need to be careful. I eat sugar free fruit cocktail as a treat.

I have learned that abstinence is easier than moderation. I love that you've been able to control your diabetes by your diet. That's my goal too but I'm still on oral meds for now. When I eat one of those tiny tomatoes, it tastes like candy to me. I enjoy stevia in my coffee in the morning. I will drink a Fresca or other diet soda occasionally. But for me, it's all about recalibrating my tastebuds to enjoy foods that don't spike my blood sugar.
That's great on your A1C...mine was 14 last time they checked it.
I think after seeing some strong comments we need to remember she's talking about improving numbers, not Type 1 Diabetes restrictions which is an issue in itself. I'm thankful for her guidance and diligence, and they steer me to further research for my own needs.You both rock!

I know from experience that if you eliminate flour and sugar all of your 'numbers' should improve and aids greatly in losing weight. It's not easy for bread/pasta lovers but it works. Once things are under control after several months you can try adding some back in.

Pam, if you like maple syrup, try Lakanto syrup, either alone or cut the maple syrup. It tastes very good, and supposedly doesn’t spike blood sugar as it’s made from monk fruit. I was surprised at how good it tastes and it is about the same price as a decent maple syrup. Wishing you the best on your health journey

Sorry I missed this when it came out.I will try the recipe in my small dash.I have made waffel french toast, egg salad ,tuna salad ,chicken salad sandwitches,peanut butter and preserve sandwitch.with just scrambled egg.The crannies help prevent slipage.I also use add in like hemp hearts and chia seeds.

My mom was a surgical diabetes. So became aware of the need for canning for diabetes and other dietary needs. She would can fruit in unsweetened pineapple juice.
I have tried sugar substitutes for jams. My favorite is monk fruit-which does not affect one's glycemic index. It is the most usable and I can't detect an aftertaste. My favorite no/low sugar pectin is Mrs Wages.
Try Pomona Pectin too.
I really wish I didn't have the taste issue with monkfruit. I have a reaction to Splenda and Aspertame so I can't use those. I can use Stevia in small amounts.
In the 1970’s we canned fruits in apple juice. Diluted apple juice is good.
Monk fruit is my sweetener of choice as well. I have not tried canning with it, though.

It can be a challenge. Everyone responds somewhat differently. So it can take a while to find what works.

Corn and peas turn to starch , aka sugar. So when eating those 1/2 cup serving have the protein. My mom was a diabetic for 50 yrs. And I watch what I eat.
Rose my husband was so high in his A12. Down to nothing now. Diabetic to non diabetic. We did the carnivore diet. All the meat and eggs and butter and heavy cream you want. No sugar. Stevia if you want sugar type. No bread. Several friends went on this after issues. Cheat on holidays. He went from 190 pounds to 135 in 7 weeks. Felt great. Can consume alcohol just nothing sweet no beer but scotch whiskey etc. he lost the belly looks so good. From a 40 waist to 32. Fyi

I just started to Prep and I found your channel. I’ve been watching a lot of your videos and thank you for sharing your knowledge. My question is my wife and I were at Good Will yesterday and I found some 1/2 pint jar. I purchased two of them, brought them home and wash the jar in hot soapy water water along with the lids and a ring, boil the lids and ring for twenty minutes and put the jars in the dishwasher and dried them in the over at 225 degrees for 20 minutes do you think there are safe to use…. I use canned sockeye salmon, for creamed salmon, over mashed pot. and leseur peas, sliced tomato and iceburg lettuce,
2 cups pumpkin, 2 cups self rising flour, pinch of salt ( other seasonings ie if wanted nutmeg, allspice…) this makes a dough…..pieces of dough flattened into flatbread, cook in skillet….great flatbread!!!!
Awesome Video. I had a diabetic Cat for 11 years stray (2) shots a day and testing of urine 3 times a day to know how much insulin was needed. I never in a million years thought I could do it, but I did and she had a good life. I cooked Turkey breast for her and mixed with Pumpkin and she scarfed it up. If she seemed off during a weekend I would add Pumpkin to her dry food just a little. I would take her levels and within an hour she was awesome. Thank you for all you do.

I'm glad to hear that your blood sugars are normal. I am a type 2 diabetic and on medication. I do take my blood sugar almost every day although it's not necessary. I want to know what my body can tolerate as far as food goes. So I monitor it. So far it's been the best way for me to stay with in my blood sugar range. Although some of your suggestions may not work for a true diabetic. I respect your advice on canned foods.
You may also want to check with your Primary Physician your proper care. Jim

Pumpkin soup is delicious, too! Many recipes online for different varieties. And you could top those waffles with sugar free whipped cream... just add your favorite alternative for sweetener. I wonder how sugar free caramel syrup would taste on them, too. hmmm... I might have to give it a go, myself! I love your waffle maker. I have have two small personal sized ones. I think I'd rather get the one you have. I am making chaffles for my 13 year old Yorkipoo who had a pancreatitis attack and he's gone blind and become diabetic. It would be really helpful to cook a whole batch up like you've done here... Chaffles are a thing!! Spray the top and bottom of your waffle maker, mix up some shredded cheese/s of your choice, a meat, and egg and or a few veggies, top with cheese, and cook. SO yummy!! Of course you can add herbs and spices to your liking as well. :-) I have to say, retirement agrees with you. You look marvelous and so relaxed and happy. No stress across your face anymore.

Be a label watcher. A lot of the veggies and tomatoes are loaded with extra sugars. Not needed for any diet.
Not to mention salt! I always look for the NO SALT ADDED varieties
Read lables. If the first three ingredients is some kind of sugar., put it back on the shelf and move on.

I do want to share with you about red meats. Red meat is good for us, if it is a leaner cut.
My husband and I hunt, process and can our own venison. Canning it gives the meat it’s own, unique flavor that we love. It also tenderizes the toughest cuts, so no meat goes to waste. We also grind our own ground meat. Since venison is virtually fat free, I add 20% of quality beef fat. And we are able to save the healthiest cuts of all - the heart and liver. Gently fried in a non-stick skillet with a Tbsp of canola oil and sliced onions, they are favorite dishes!
I hope you will one day have the opportunity to try some canned venison. Thank you for being such a blessing to so many of us!
