  • Ingredients:
    1 kg raw mangoes, peeled and sliced
    1 kg sugar
    1 cup water
    1 teaspoon cardamom powder
    1/2 teaspoon saffron threads (optional)
    1/2 teaspoon rose water (optional)
    Instructions:
    Prepare Mangoes: Peel the mangoes and slice them into even pieces.
    Prepare Sugar Syrup: In a large, heavy-bottomed pan, combine sugar and water. Stir over medium heat until the sugar dissolves completely.
    Cook Mangoes: Add the mango slices to the sugar syrup. Bring it to a boil over medium-high heat. Once boiling, reduce the heat to low and simmer gently. Stir occasionally to ensure the mango slices cook evenly and become tender.
    Flavoring: Add cardamom powder and saffron threads (if using) to the mango mixture. Stir well.
    Continue Cooking: Allow the mangoes to cook in the syrup until they are translucent and the syrup thickens to a sticky consistency. This can take about 30-40 minutes. Keep stirring occasionally to prevent sticking.
    Check Consistency: To test if the muraba is ready, take a small amount of syrup between your fingers and check if it forms a single thread (one-string consistency).
    Add Rose Water (optional): If desired, add rose water for additional flavor. Stir gently.
    Cool and Store: Once done, remove the pan from heat and let the muraba cool completely. Transfer it to sterilized glass jars and seal tightly.
    Serve: Aam ka muraba is traditionally served as a condiment or dessert. Enjoy it with parathas, puris, or as a sweet treat on its own.
    Storage: Store the muraba in a cool, dry place. It can be kept for several months if stored properly.
