    According to traditional Chinese medicine, this dish help to improve Qi, warm the blood, and expel cold and dampness. Many believe it speeds up recovery from childbirth and restores strength and vitality to the body.
    Some even believe that this dish can improve skin texture, and the ginger improves circulation.
    According to Wikipedia, the vinegar breaks down the calcium in the pork bones. Pregnancy and breastfeeding can deplete calcium in women’s bodies, so one of the main nutritional benefits of the dish is its high calcium content.
    Ginger also contains Vitamin C, which can help bolster the immune system. The addition of eggs provides protein, which can help repair muscles.

    Instant Pot Black Vinegar Pig Trotters
    Ingredients
    1 pigs trotters (fore trotters, weight about 1 kg)
    6 peeled hard boiled eggs
    150 g old ginger, peeled and crushed slightly
    6 tbsp palm sugar
    2 tbsp light Soy Sauce
    2 tsp salt
    2 & half cups of vinegar
    1 cups water
    1 tbsp sesame oil
    2 tbsp Shao Xing Chinese wine ( I used Hennessey)
    Method
    Clean the pig trotters with salt and cut into 3-4 cm long pieces. Blanch in boiling water and transfer to cold water and wash off the impurities.
    Put the Instant Pot on sauté mode. Heat up the sesame oil and sauté the ginger pieces for 2-3 minutes.
    Add the sugar substitute and mix well. Sauté for another 1-2 more minutes.
    Add the pig trotters ensuring that these and the pork pieces are submerged in the liquid.
    Off sauté function and select meat stew button, increase cooking time to 37 - 45 minutes. (Depending on how big the meat size)
    Allow NPR for about 10 minutes before you open the lid.
    Open the pot and test the meat, taste the gravy
    - you may need to adjust the flavours with salt and sugar substitute. Add eggs and the rest of the ingredients.
    Put the pot back into meat stew mode and cook for another 20 - 30 minutes depending on how soft you like your meat.
    At the end of the cooking, if you like sauce to be more intense, you can sauté with open lid for 15 min (Optional)
    I prefer mine tobe soupy so I can eat it like soup.
