  • I am very excited to share one of my favorite Ghanaian delicacies it’s no other than the most loved by all Ghanaian okro/okra stew recipe. This is nutritious colorful and most definitely loved anytime its served by Kids and adults.
    So please follow the step by step recipe and you will make the tastiest Ghanaian okro stew ever which can be enjoyed with all types of swallow favorite has to be banku.

    Did you know that #okra contains a thick gel-like substance known as #mucilage which can bind cholesterol during digestion causing it to be excreted with your stools rather than it being absorbed in your body? Okra is very nutritious .

    Ingredients:
    Vegetables:
    1 and half kilos of fresh okra/ okro
    4 fresh tomatoes
    One habanero pepper/ 5 used for ganishing
    3 big golden onions
    4 red onions
    A handful of mushrooms
    400 grams of garden eggs / egg plants
    Proteins:
    2 kilos Mackerel fish
    250 grams wele (cow-skin)
    300 grams cowfoot
    200 grams cow stomach
    50grams of momone (cured salted fish)
    70 grams of supaku (salted stock fish)
    Natural spices;
    A tablespoon of cloves
    A tablespoon of cumin seeds
    A tablespoon of aniseed
    2 shrimp tablet
    Salt to taste
    Half tablespoon of bio carbonate soda
    1 and half cup of palm oil (optional vegetable oil)

    What is the name of the spice fried in the palm oil before adding the onions?

    I don't intend to destroy your cooking skills but just allow me to state that the okra stew you are cooking is nothing but poison. How do you mix meat, mushrooms, crab, and fish in one single stew? Each of them requires different digestive processes in the stomach. You could have stuck to one or two of them and that would have been very fine and exciting. Don't be angry with me, please.

      Dr Bagyiri… if you I cooked them altogether , then you might have a point., but each of these ingredients you made mention of were cooked separately so they all got their cooking time they needed. Sometimes we may have a point but now we put our point across destroys everything…. Stating categorically that this is nothing but poison is so wrong, and of course not, you can never destroy my cooking skill with an ignorant comment. Let me just take it as you are not of full knowledge of what you just said, so I can pardon you. I will kindly edge you to educate yourself more on this and come back again you are forgiven. Peace

However, I wish to let you know that I am neither too full of knowledge nor ignorant about issues that are of interest to me. I love okra soups and stews and that is the reason I was excited when I saw your video. I appreciate your pardon so much but would love to also urge you to do some more reading about mixtures of various proteins in one pot. I guess we are all learning. Thanks.

      @Edward Bagyiri I am Ghanaian and this is a Ghanaian cooking food channel obviously.Okro stew and a lots of soups and Ghanaian meals are prepared with a mixture of different meats and fish (mixture of proteins as you would state) and vegetables. We love pur meals and it's part of our culture. I have a lot more to say to you but I'll hold my peace. You may need to educate yourself more about African foods and the culture. That comment was uncalled for and needs to be deleted. We as subscribers greatly appreciate the content and the hard work @lovystouch puts into her channel. It's a lot of work so please no negativity. If you have nothing nice to say. Hold your peace.

      There's nothing wrong with cooking all that in one pot. If your worry is that each of them digest differently, worry not. In lame man terms they all go to your stomach, honestly, without causing any harm. Nutritionally, there's nothing wrong with mixing protein. The only thing is that there's light protein and heavy protein and one takes longer to digest but it's obviously not going to kill you.
      Again, if you worry that they have different digestive processes, then I guess you shouldn't eat banku with okro together or rice with chicken stew together, because banku/rice are carbohydrates and chicken stew/okro soup has protein and other things. Carbohydrates have different digestive processes from proteins.
      You can cite your source here for us though, I'd like to know more about your theory. 😊
