it's basically like the turkish börek or pogaca which can be with spinach, parsley or even just minced meat, soo delicious ! i make it often for my family, half with spinach and half with parsley in a flower shape which covers the whole tray and everyone can rip a " petal" off ^.^
How delicious! Thank you for sharing the recipe. I would *really* recommend against raw spinach being an option though contrary to the video. It will wilt down leaving empty rolls and will release a lot of water making the pastry soggy.
When you use raw spinach you cook it and then drain it before you add it to the cheeses and other ingredients. If you're using frozen spinach, You just defrost it and squeeze all the water out. I've been making spanakopita for about 40 years. In the past, I used frozen spinach but then about 10 years ago, when baby spinach in a bag became available, I switched to fresh. Honestly, I'm not sure if one is better than the other in the final product. The only big difference between the one in this video and traditional spanakopita is the use of phyllo dough vs frozen puff pastry.
@@AnnaEQ2 In this video she said “but if you like your spinach cooked you can sauté it or leave it raw” I think thats where the confusion is, I know she’s using “raw” frozen spinach so it’s already wilted but someone who’s non the wiser might try to use actual raw uncooked fresh spinach
We have a similar appetizer in Greece called spanakopita, same concept but we use a cheese mix of feta and ricotta (or cottage cheese instead of ricotta if that’s what I have on hand). Also may sound weird, but adding half a tsp of dill also elevates the spinach😊(tho If I have none I hack it with a few spoons of dill pickle juice😂). Love your idea of puff pastry!
Only have a version of this in supermarkets here in Russia. Called Greek snail and it's so tasty! I learned how to cook it after falling in love with the cheese-spinach combo
Here in Trinidad we call them spinach pies. Our school feeding program provided them and when they did you were lucky if you got one. Amazing love love love. Honestly it's so good I call it a guilty pleasure❤

I feel the same with my kids living in LA!! I try to expose them to different ethnic foods 3/4 of the time that we eat out(at least every Friday)....I mean, I can make burgers at home ;-)

I love taking my family’s traditional dishes and adding a little flair. That looks amazing. I can’t picture it made any other way..when you get the elders approval, that’s when you know you’re onto something. Seeing my dads face light up, when he never complimented any dish is to this day 1 of my biggest accomplishments for myself. Being a 1st generation and having to learn everything about who our family is while getting by in a completely different country isn’t easy but bringing as much culture into our homes and later into raising our kids, is so rewarding. My fathers since passed but every thanksgiving I still make him his Ethiopian feast with all his favorites!!
My mom would make the same thing and they have been my favourite since I was very little ! She’d bake them as cups in a mini cupcake pan. Puff pastry in the cup and up the edges, fill with the spinach mixture and put a piece of puff pastry on the top 😄
Always puff pastry!! As a Bulgarian who hates goat cheese unless it’s a certain brand and way, you need to add goat cheese instead of shredded cheese. I promise it will be so much better. Banitsa bites or “magic cheese bites” as my toddler calls them, are AMAZING 🤧🤣❤️

@@x-starlight-x for börek feta cheese is used, basically a sheeps milk cheese which is white and salty :)
