    This is the genius of Italian cooking: Fresh ingredients in a simple recipe that allows you to taste each one.
    I also appreciate the 'sanctity' of the table.
    When food is prepared with care, it must be eaten with respect.
    For 4 years I was a waiter in a fine Italian restaurant in my city.
    When we closed for the night, the entire staff sat at a large table and ate dinner together.
    One night, as we were eating, one of the waiters started to leave the table because he had forgotten to do some small cleaning task.
    The Italian chef called him back.
    " Whatever it is, it can wait. When you sit down to eat, be present and attend to your dinner."
    Since that moment, I have adopted his philosophy.
    One small thing that I noticed in your fine video: The handle of your pan was sticking out over the edge of the stove. I worry that someone might bump it and cause a spill of hot liquid. So, I always swing the handle around so it is over the top of the stove.

    OMG....Once again I really enjoyed watching you. I never knew that pasta as "butterfly" < i always called it "bow tie". I learn something every time I watch one of your videos. This sauce looks so simple and delicious and FAST! I can't wait to try it!!!

    Americans don't seem to understand the concept of "pasta al dente". I was in Florence with my gf and an American couple sitting next to us was complaining to the waiter cause the pasta was undercooked. The Italian part in me died instantly hearing that conversation.

      Quelle poche volte che mangio la pasta deve essere rigorosamente "alla francese", ovvero scotta. Altrimenti per me è cruda. Sì, il mio lato italiano è in vacanza su Marte! :D

    Thanks for the delicious recipe, Marco! I was a little surprised there was no garlic, though, which we tend to use a lot in Greek cooking. I'll be in Roma in two weeks' time and I'm really looking forward to the food!

      It is indeed called a Slap Chop. Mostly because you slap the top and it chops your food. Not the most original name

      E questo é niente. A volte mettono tutto insieme un ingrediente dopo un altro e quindi non scolano ma fanno un sugo di po... Un acqua di pomodoro con tanti ingredienti bolliti :(

    Sweetie. ..it's called a chopper. ...nice sauce. You'll get a fuller favour sottofritto if you put the onions in cold oil, a little salt and then heat.

    Sofrito is onion, celery, carrot, garlic, sometimes mia zia Maria would add lardo, but not often. But I Love watching your videos.

      Soffritto can be made in different ways of course, this one is the best and the simplest that you can do. Sugo semplice = Simple sauce. Simple sauce need a simple soffritto.

    La pasta DEVE essere saltata in padella!! la pasta e il sugo devono essere ben amalgamati :)
    Un altro piccolo consiglio (oltre all'aggiunta dell'aglio) è quello di usare pomodori freschi, farli a pezzi molto piccoli, saltarli in padella con il soffritto, cuocerli bene fino a creare una salsa e poi buttarci la pasta ;) Decisamente meglio della solita passata in barattolo
    Se poi invece del classico basilico usi il basilico greco.. beh.. è la morte sua :D

    If you admitt an advice, don´t let the pasta get cold. You just have to have ready the sauce, so when the pasta is coocked you drop it into the pan over the sauce but, VERY IMPORTANT, don´t drain it, because the water where you have boiled the paste will give you an extra flavour and, most important, the ideal texture for the dish. Just trust me. Best regards.

    please attneto con quella cipolla :) se dici agli stranieri che la mettiamo nel sugo, loro, almeno gli inglesi la mettono tre quintali dappertutto :) nice video btw!!! pensa che io apro la passata ( no la dolmio che e solo cipolla ma quelle che trovo italiane) e la metto sulla pasta :) mi ridono appresso pure gli inglesi :) ma hai dimenticato il parmesan che none che mi piaccia ma si usa sulla pasta :)

      No, not really. Some people might, but it's definitely not the traditional way. Italians don't use garlic anywhere near as much as other people think. The majority of traditional Italian dishes have no garlic in them.

    That cutting device is amazing! I have never seen it before...does anyone know what is called or where do you buy it from internationally? I need that, I can not cut onions to save my life :)))- i always cry so badly I need to stop or I´d cut my fingers off :)))

    Pasta rigorosamente saltata in padella prima di servirla. Io addirittura faccio fare un ultimo minuto di cottura nel sugo.

    Al dente, very important. Especially if you plan on throwing the pasta into the sauce. The pasta will continue to absorb moisture! If your pasta is overcooked, you'll eventually end up with mush. 😂😝😝

    All the comments are in Italian! I can kind of understand them because I can speak Spanish and its kind of similar. I'm trying to learn Italian, does anybody have tips for this beginner?

      Try with a book in your language and buy it in italian. Start reading it in italian, and if you're having some troubles,read that part in your language too. However if have never studied italian, start with a grammar book =) I'm italian btw =)

    Ma Marco, io uso ancora aglio con cippole e pomidori pelati di San Marzano. io uso la pasta di tre regioni: Abruzzi, Napoli O Puglia. io comencio con il sugo e ponere la pasta a cucinare anche con sale. Due minuti primo di stare Al Dente, io aggungio un po d'aqua della pasta al sugo e dopo aggungiere la pasta al sugo e cucinarla per l'ultima due minuti fino diventa come uno. poi, io toglierla di cucinare e aggungiere olio extra virgine fresco e po di formaggio(al meno c'e il pesce nel sugo)

    Io ho notato che gli stranieri lanciano uno spaghetto contro il muro, uno stipo o altro per capire se sono cotti o meno. Io ho provato a spiegare loro che basta tagliarli per vedere il grado di cottura, ma niente!

    ti consiglio di mettere meno cipolle, e se puoi di sostituirle proprio con un pezzo di carne ( come una salsiccia ) molto grasso, inoltre devi mettere molto meno sale quando l acqua bolle e di scolare la pasta ( tirar fuori la pasta ) 3 o 4 minuti prima rispetto al minutaggio sul pacco di pasta e di farla saltare nella stessa pentola in cui hai cucinato la salsa così diventa veramente " al dente "... se vuoi te lo scrivo in inglese

      We use "besciamella"

      + Susan Weckbaugh If you like the lasagna with mozzarella ( this is how we use to make lasagna in Center / South Italy ) you can drain it by cutting it into pieces and leaving them into a colander for about an hour and squeeze a bit before using it .

      +Susan Weckbaugh I'm from the south and we use Scamorza for lasagna, which is basically like a 'dried mozzarella'. If you can't find it, when I'm abroad and want to make lasagna I look for 'pizza mozzarella', I don't know if you have it, but it's not watery, though not as flavorsome as mozzarella (especially the buffalo one, yummy).
