Thank you! Notes for myself and anyone else who might see this:
    • can use fresh or frozen shrimp: put in pot and cover with cold water
    • put heat on high and (optional) add spices and flavors, including possibly lemon juice or a lemon slice
    • STOP heat right before water gets to rolling boil; want shrimp to be a brilliant pink all the way through
    • plunge shrimp into ice water OR if don't have enough ice, run under cold water (goal is just to stop the cooking process. In video, ran under cold water then poured into ice water)
Basically: add shrimp, water, and flavoring to pot; stop heating right before rolling boil; then put into ice water.

This is just amazing. It takes all the timing and guesswork out of simmering shrimp and, best of all, it automatically compensates for shrimp size, variety and degree of frozenness. This is so important since shrimp have a very small window of cooking perfection. I wish I knew about this 40 years ago. Thanks so much for posting this.
