No Bake Banana Cheesecake - Easy and Delicious!
Vanilla Wafer Crust:
2 1/4 cups of vanilla wafer crumbs
¼ cup packed brown sugar
1/3 cup melted and cooled butter
-Pulse the vanilla wafers into a fine crumb using a food processor or blender, let the food processor run for at least 2 minutes. If you don’t have either, you can place the cookies in a Ziplock bag and crush it with a kitchen mortar or a rolling pin.
-Mix the vanilla wafer crumbs, brown sugar and melted butter, stir the ingredients well, making sure that the crumbs are completely coated. Lightly grease the bottom and sides of a 9-inch spring form pan. Next, Pour the crumb mixture into the pan and press well into the bottom and partially up the sides of the pan.
-Refrigerate the crust in the meantime until we are ready with our cheesecake filling.
Banana Cheesecake Filling:
8 ounces softened cream cheese
3.4-ounce box banana pudding mix
¾ cup cold fresh milk
8-ounce whipped cream
1 mashed ripe banana
-Get a medium size mixing bowl and beat the cream cheese until smooth.
-In a separate bowl, combine the banana pudding and cold milk together, mix until thick and well blended.
-Next, add the banana pudding mixture into the cream cheese, add the mashed banana and blend well until smooth.
-Add the whipped cream to the mixture folding gently and blend well.
-Get the crust out of the fridge, then add the cheesecake mixture into the prepared vanilla wafer crust.
-Cover with plastic wrap and refrigerate for at least 4 hours.
Cheesecake Topping:
10-12 mini vanilla wafer cookies
½ cup cookie wafer crumbs
½ cup banana slices
½ to 1 cup whipped cream
