You guys should try Marconi Giardineria. I believe that you can purchase it on their website. Put the giardineria on a homemade pizza with sausage or Italian beef. You will not be disappointed!! Great video as always. Been following you guys for awhile.
Living in Chicago my whole life and eat out all the time. I have never heard of this sandwich. Even the peppers are not chicago correct. If you Google you will see. But, I like how a-bunch of friends came together and made something new. You gotta love the hustle.

The cheese. I found a recipe from the channel Pasta Grammar called Frica. It uses Montasio cheese and boiled potatoes. 50/50 mixture. Mashed lightly in the pan together and fried on both sides. Cannot find Montasio cheese locally but a cheese guy was at the Restraunt store and recommended Fontina as a close substitute. My wife got 20 pounds of it. I made Frica and shared it at work. People now request me to make it as a side for them to reheat with their dinner. It is a softer cheese and all of your descriptions match the flavor. I've been making omelettes with it at work in the morning.

Hey Chris, I heard you say you like a little Mayo with your sandwich. Have you tried Kewpie mayonnaise? It's a Japanese mayo, has a nice kick to it I've found it at my local Walmart here in Tewkesbury. I'm from Lowell. Love you guys. Huge fan.

You can get thin sliced ribeye steaks. Costco sells them in thin sliced packs at there meat counter
