- Chef Jason teaches Kezzianne how to 'bubble' a 'Trinbagonian' Fish Broth/Broff:
*Yield: 8 - 10 Portions
INGREDIENTS
2 Lbs of King Fish/Red Snapper
Juice of 1 Lime
1 Tsp Salt
¾ Tsp Black Pepper
3 Tbsp Fresh Green Seasoning
2 Tbsp Vegetable Oil
½ Cup Onions, chopped
1 Tbsp Garlic, minced
6 Pimento Peppers, minced
2 Sprigs of Fine Thyme
2 Medium Carrots, peeled and sliced ¼ inch thick
¼ Cup Celery, medium chopped
¾ Cup Pumpkin, medium diced
¼ Cup Tomatoes, medium diced
8 Cups of Water
6 Small Ochros/Okras, sliced in half, head and tips removed
5 Oz Potatoes, peeled and largely diced
5 Greens Figs, peeled and sliced ½ inch thick
1 ½ Tbsp Salt
1 ½ Tbsp Chadon Beni/Culantro, minced
3 Tbsp Chives, chopped
3 Oz of Macaroni
1 Tbsp Salted Butter
2 Tbsp Fresh Lime Juice
Salt & Black Pepper, to taste
METHOD
1. Have fish scaled, cut into ¾ inch thick pieces with head and tail retained.
2. Place fish pieces into a bowl of gentle running water to cleanse and squeeze fresh lime juice onto fish to aid in the washing process. Strain all water properly and season with salt, black pepper and fresh green seasoning. Let sit to marinate.
3. Meanwhile, place a large high sided sauce pan over high heat and add the vegetable oil.
4. When heated, add the onions, garlic, pimentos, thyme and sauté for 2 minutes.
5. Add the carrots, celery, pumpkin, tomatoes and cook for an additional 3 minutes on medium heat.
6. Add in the fish’s head and tail and allow to sear in the pot to develop a light brown colour for 3 minutes.
7. Add in the water, okras, potatoes, green figs and salt. Stir, cover and increase heat to bring to a boil.
8. Once boiling, reduce heat to medium and bring to a simmer. Add the chadon beni, chives and break macaroni strands into three and add to the simmering broth. Continue to simmer for 10 minutes.
9. Remove cover and insert fish pieces to cook for 8 minutes.
10. Once fish is cooked, add the salted butter and some of the lime juice. Taste and add more lime juice if needed and season with salt and black pepper to your desire.
11. Once happy with flavors, remove immediately from stove and serve in soup bowls.
12. Enjoy on its own or with a slice of crusty bread on the side.

Dear Foodie Nation, many thanks for this recipe. I’m the caregiver for my mum who has late stage Alzheimer’s. She’s in hospice care now and having a hard time eating solids so I’ve been making soups. I’ve been trying to make as many soft, creamy, nutritious foods that she can easily eat. This broff is a winner. It’s chock full of nutrients and delicious. And I’d like to think that it reminds her of her home in Trinidad. We live in NYC and it hurts my heart so much that she will never see her home again. Your recipes bring a little home to her. I never comment on videos, but wanted to thank you for bringing a little joy to my mom as she nears the end. 🙏🏽 ❤️🙏🏽
Omigosh that is so sad , sorry to hear that
@@beauty3268 Thank you so much. My mom left me on October 15th and my world is broken and will never be the same again.
@@ShenGen69 I am so sorry to hear that , I lost my sister around that same month

My mum always called Fish Tea which is my favorite comfort food.
Married to a trini but not a trini so you guys videos have me tasting good😊🤭 love u guys😍
Tried it today for the 1st time and it came out great. Thanks guys
I just made this, my grandma used to make this for me all the time. She recently passed and I didn't have the receipe. I loved all the techniques this was so easy to do. Im also glad you didn't make it in a pressure cooker lol. Currently, my belly is full. THANK YOU!
Woi boy da recipe healthy boy. And a nice way of timing the broff 😋😋😋😋 lovely
I came across a RUclips video yesterday of a Trini Indian woman calling Black People the N-word because she didn’t like the idea of a TV programme containing Black People being aired on a predominantly ‘Indian’ channel. As a Black Woman I was astound by the fervour and vigour of her rebuke of the Afro race, even to the point of calling the radio presenter she called and complained to the N-word. That said, I have watched your cooking channel several times and I’m pleased to say that it gives me a little bit more hope that we can all get along. It shows me that our differences are not what defines us, but our sharing and appreciation of those differences are what make us stronger. So simply, Thank You and carry on. Bless.
Making this in the week....gotta have dumplings but no okra for me. In Dominica 🇩🇲 we say braff 😂🤣🤣
Dumplins is a must and I don't think I've ever had it with macaroni or noodles. Looks great
@@noalcala43 same here, no macaroni or noodles.
I am shocktified..I never hear you have to pay for fish tail and head seperate..that's robbery..anyhow..fish broth is one of my favorite dish and that's just how i prepare it.💛
Some places do that.. Like pig tail..lol
You can buy whole fish and then cut it yourself to make it
I always enjoying u'll videos and recipes. U two have great chemistry. I always try and enjoy. Thanks.
Thank you for watching!
Best thing for a Trini hangover 🤤🇹🇹🇹🇹🇹🇹
Best thing followed by a swim in yhe sea after a night on the Puncheon..needs some scotch bonnet yam and dumpling in that pot though. 👌
Finally tried this recipe. It was awesome. I did however use salmon fillet, that's how I usually buy it and added some salmon bone broth that I usually make from the head and bones of the salmon. No salt butter though . I sauted the seasoning with kerrygold/olive oil. Was very, very careful not to cook the fish too long. I was very pleased with it. I think it was cooking the veggies first and not adding them all at once. Will certainly make again with King fish. Thanks for a great recipe.
This looks delicious. I am going to make it. Thank you for the recipe
Yummy fish broth
Thx for the recipe I didn't have all of the ingredients and it didn't come out the same as yours did but my family enjoyed it.

I do mine a bit different as i start with my fish and seasoning once it flavours the liquid i remove the fish and add the slowest to the fastest to boil put my pepper which i squeeze to the side once swollen.
3rd to last thing i add is the golden ray , 2nd to last is lime, and last is the final salt to finish.
Great recipe I made it today and it was so delicious. Great video
U guys make it so easy to learn

#MyFoodieAirFryer ♥️ I love all videos. They really helped me to learn to try new things and basically cook during this quarantine. Thank you for all the tips !!🤞🤗♥️♥️
Feesh braff. This is what my ears heard when I was growing up. Now that I am much older, ( much), I have put 2 and 2 together. No aspersions, but that is how the fishermen from up the islands ( not down), would have pronounced broth. Places like the Grenadines; Cariacou, Bequia pronounce the 'o' in broth like an 'a'.
I enjoy your cooking video and especially with the beautiful young lady I hope she can fix some of those fish for me when I visit Trinidad
Everything looking great and I want to know when is the maxi taxi tours to eat some great food in the countryside
Nice
My grandmother always used fried fish for fish broth, and fish in gravy...

Chef where did you get your table top single stove to buy?
I can’t wait to try all these different recipes😋❤️ #MyFoodieAirFryer
Nice I am hungry delicious
How long does it take the fish to cook through?... I always end up overcooking my fish 🙁
Depends on the type of fish but generally 7-8 mins max as the heat would continue to cook the fish even after it comes off the fire.....
@@sanusoogrim364 Ohh... thank you!! 👍
We need a camera over the pot, peeps!
fish broff☺looks delish
I swear I watch these videos jus to see that kezzianne girl😍😍😍😅
Thats the real deal !
Pada keep yuh tail😂 enjoy yuh head🤣🤣
What is the fish pack and why.
My grand mother never used macaroni any way she died at 95 years old so may be this is a néw school thing any way it looks 😋
I really like her
Trinis always change words. Its broth
Pronouncing th as f occurs in some English dialects such as Cockney and some parts of London and some parts of Scotland. Trinidad and Tobago was a British colony and so inherited the dialect from them. It's not wrong.
Fish Broth
At time 6:08 it should be 'Partner, scratch yuh head and hull yuh tail!
I do not eat fish without scales. Can you recommend a fish with scales which I can use for fish broth? Thank you
Red snapper
Carrie is acceptable also.
Trini reviver 🍲 🐠 🇹🇹
That's a good fish broff. I call it fish broff it's a Trini thing. A broth is pure liquid.
I never know bout calling it "braff". Always pronounced it fish brot, without the H of course. LOL
Love my 🇹🇹 soup
You guys are absolutely awesome! Since it's Easter...how about some hot cross buns? That would be great or even home made bread.
Ya get Armani sponsorship. Nice 👍🏽
I thought fish broth was supposed to be boiled and not cook in oil.
Dem eh know how to make fish broth...that is not how to make that dish at all.
Everyone makes these dishes differently. I don't not add oil or golden ray in any of my soups. I boil everything together (fish goes in last ofc). But I guess it's all about taste 🤷🏻♀️
You guys had me up until the addition of the macaroni🤯😢😰😭😭😭🤯
🤣🤣🤣 that is an essential ingredient for broff!
@@rheadean2192 NOOOOOOOOO!!!! Ah good "Broff" has just 6 ingredients:
1. Green Fig 2. Potato 3. Carrot 4. Pumpkin 5. Ochro and 6. FIIIIIIIISH(I have a preference to Dolphin or Tuna Tail)
I agree, macaroni is not for fish broth
@@ironchef16524 🤣🤣🤣🤣🤣 u sound like my dad-in-law except he said 3 things...green fig, potato & carrot 😑
I said that same thing...please swap the pasta and put some green banana. 🇻🇨🇻🇨🇻🇨🇻🇨
Keep yuh tail 😂😂😂
EhJASON,WHAT ABOUT SOME DADHEEN LEAVES OR BOAKCHOW?
🇹🇹🇹🇹🇹🇹My fave yummy
Used to be called a braff. It had to do with the strong pronunciation of the 'o' by the fishermen of up the islands. I.e. feesh braff. Please, no offence
Yummy 😁🇹🇹
Where is the green fig
Hi chef and jessie
How are you looks good smelling good ok how about some bananas and dumplins it a choice thank you
