PATTANI, THAILAND - First of all a huge thank you Bang Dim and his amazing family for inviting us to their home for a once in a lifetime home cooked meal. It was outstanding, a meal I’ll never forget. #IndianFood #MalayFood #Pattani #ปัตตานี
First off, back story:
A few days before, I was with Muhammad from Papa Tagu ( • Arabian Thai Food!! GI... ) and we stopped by the shop where he buys spices for his Thai Arabian food. We stopped in to say hi partly because the owner of the spice shop, Bang Dim, watches our video - and he’s the King of Spice in Pattani (his spice shop is called Muhammad and Sons: goo.gl/maps/nk4qphxFs677Y5XR8). We had a great time, and enjoyed some amazing masala tea. He also gave me the ring! Anyway, Bang Dim is half from Kerala, South India, and half local Pattani Malay. He was born in Pattani (ปัตตานี). At that meeting, he invited us over to his house to make Indian style, but Malay at the same time fish head curry.
A few days later, we headed over to the house. Bang Dim, along with his wife and entire family put on an ultimate display of hospitality and welcome, cooking an unbelievable huge fish head curry. The fish head curry was a combination of South Indian and Malay, using dry spices, curry leaves, and even green sour mango in the curry. It was outstanding, sensational beyond belief. But not only was there fish curry, but there was also an entire Malay and Indian food feast - mainly seafood.

What a lovely family to cook a huge meal for you Mark. I love how the Dad invites you home for just a 'Fish Head Curry' and he and his wife and family create a massive meal for you with so much pride and love. What a generous and happy family.
Absolutely amazing. Real Thai, Malay, Kerala, Muslim hospitality, the mix of the best.
This is something unique, perhaps, best ever example of a cross culture food. These great host has developed food from three distinct cultures and food techniques, the Malay, the Thai and the South Indian. Although, food in all these areas look similar but there is always some subtle difference of technique and use of locally available ingredients. And Mark is best person in the world to judge these foods. My regards to the hosts too.

I love the fact that the “Host” knew Mark isn’t a favorite of sweet things based on the fact that he watches his Channel because to put simply the First snack/pudding to the last dessert plate Mark had he was pleasantly surprised none of them were sweet at all. Thumbs up to the Host for his attentiveness. And Mark greetings to you and your Family hope all is well with you guys.

He is well diversed when it comes to Asian cultures... there's one word he said 'sedap' means delicious in Malay...and basically tempoyak is also a Malay word for that particular fermented durian...and budu.

i'm sure that our Kerala friend, ebit jose will like this video for bringing back his roots! btw, this is the second part of the Malaysian food memories. the fish head curry which is very popular in Malaysia looks very appetising. the differences are the some Malaysians prefer to make the fish curry sauce redder and the additions of whole ladyfingers and slice tomatoes as vegetables. the fermented durian tempoyak really brings back to the last year videos in Pahang and also the famous fermented budu fish sauce originated from Kelantan! i also like to eat the scrambled egg curry dish and it is very easy and simple to make with multiple ingredients based on choices.

Im so freaking addicted to Mark Wiens’s videos that I honestly can not eat my food without watching one of his videos. And i have made my own food watching zones according to the items I’m eating while watching. Tempoyak is super common in Sumatra culinary, so i assume tempoyak belongs to all Malay nations, including Pattani. Super, alhamdulillah. We are all brothers!

They're very common in SEA country. Whenever there's a small region nameworthy of their durian breed, there's tempoyak to highlight.
@@karmickoala101 why I address tempoyak specifically to Malay, because I was raised in Java island, and very very little Javanese know that fermented durian (tempoyak) can be applied as main ingredient for food, except those who have Sumatra (read: malay) roots.
@@tigornomics I see. It's no different than other country, if so😄. It is why we have all these fermented stuff (small fish, small shrimp, durian) tied to regional cuisine, more than a country dish. Not even a racial cuisine, afaik. It's southern Thailand, north Malaysia, East of Semenanjung cuisine.

Very difficult to sleep after watching this episode, my mind keeps telling me I should eat FISH HEAD CURRY.
So sedap, even though you can get all that easily in malaysia but it still looks differently deleicious.
This is so fantastic, and so is the new ring! It is also so interesting seeing you as a foodie with family in town having such a wonderful and truly engrossing. I loved seeing your wife and the "spice girls" chatting, the kids being kids and the men doing something on the porch. I was worried that you all wouldn't be able to eat all that food but after hearing "I ate 4 plates" I can rest assured that little food goes to waste.
