  • Pistachio cheesecake/ Delicious and easy Pistachio Cheesecake
    Ingrediants:
    For the crust:
    - [ ] Graham cracker crust or digestive biscuits 160 grams/ 2 1/2 cups
    - [ ] Melted butter 1 stick(8 TBSPS)
    - [ ] Sugar 2 TBSPS
    - [ ] Shelled Pistachios unsalted 1/2 cup
    Filling:
    - [ ] 4 (8oz) packets of Cream cheese at room temperature
    - [ ] 1/2 cup sour cream
    - [ ] 4 eggs
    - [ ] 2 tbsp cornstarch
    - [ ] 1/3 cup heavy cream
    - [ ] 1/2 tsp ground cardamom powder(optional)
    - [ ] 1/2 tsp vanilla bean paste or 1 tsp vanilla extract
    - [ ] Sugar 2 cups
    - [ ] Green food color optional
    - [ ] 1 1/2 cans of pistachio paste
    Topping/Icing:
    White chocolate
    Heavy cream
    Pistachio paste 1/2 cup
    Ground pistachios
    Important note:
    Cheesecake cracks!! Do not panic. Bake it long and slow. You can bake it in a water bath( place the cake pan covered by aluminium foil all around) in a foil dish containing hot water half way to the pan. This ensures even baking and reduce the chance if cracks.
    Once baked, allow it to cool in the oven for 1 hour by leaving the oven door slightly open and then on the countet to cool completely. Then referigerate it overnight.
