Santi and tom are like siblings at this point they tell bad stuff about each other but they always help each other out on theories from time to time😂😂❤❤❤❤
Could it also be the idea that by using a bigger plate, the food looks smaller so people think they’re aren’t getting filled up as much so they are more inclined to buy more food such as dessert, thus earning the restaurant more money
They miss "the point" of: Fine dining (tasting menus, which are the "what the heck am I paying $50 for 3 bites why???" experience: even if what's actually happening is roughly as described on the single-dish level, most such menus are 6-12 dishes long and every single detail from the cooking times and temperatures to the sauce splat æsthetics to the angle of the plate when placed in front of the guest can have been explicit and precise choreographed, although some places just say "oh yeah we totally do that" and charge the same prices for a less-proficiently-prepared-and-served version with merely very good rather than excellent ingredients and technique). These are most of the restaurants chasing Michelin stars in any given year. 5* hotels tend to have a contender if not a current Michelin pedigree, 4* hotels tend to have a "this is the nice steakhouse" level although the actual cuisine involved varies from steakhouse to specified region or national fusion and some will offer tasting menus, and those and other restaurants in the 3 or 4/4 dollar sign range which starts around "nice steakhouse" are probably the worst shrinkflation+offenders mentioned in the video: fine dining prix fixe menus justify their exorbitant costs with "we develop 50 dishes per year, sourcing only whatever's in the peak of its season and of its type, with decades of knowledge and training on our staff and centuries to millennia among the people who've directly taught them, and that allows us to provide the pinnacle of culinary art, history, and science." Tapas and "small plates" (they correctly identify that the "on average, 2-3 per person, adjusting by relative appetite" idea misses the point of letting people try more things and then stop when satisfied rather than over-ordering, but incorrectly blame the restaurant for the consumer's ignorance. The "right way" to order and eat tapas is a few dishes at a time, but the main reason for that is you don't want to order 8 dishes at once so that 4 plates of hot food get cold on your table while you work on the first 4. If the dishes themselves are unfamiliar, the winning strategy is starting with staff recommendations and/or the ones your group is more sure about and then seeing what else sounds good based on individual and collective preferences and appetites. The "Average dining out price" is brought way down by the glut of fast-casual (and fast food?), almost all chain restaurants (aside from a few steakhouse chains, perhaps, and even those are midrange trying to sell itself as "fancy steakhouse"), the "bar food pile the fries basket high" style, and "neighborhood deli" type places. Those eateries should be thought of as a fundamentally different product than "here is the story of my life and my family's history and the love of food of my people, on a plate or in a bowl." The theory acts like all dining out is the latter category, which I think of as "restaurants that want to be restaurants rather than prepared food purveyors, which want to keep customers coming back to keep paying the bills, not necessarily bring something *new to those customers* or especially excellent or the world." I know I sound like I have disdain for the "average dining out price" meals; I don't. In fact most of the best food I've ever had outside of home cooking was in that price range, but it was from small bakeries, a legendary example of a "neighborhood deli," bagel shops, cafes with 1-6 storefronts in total, counter service in food halls, and the like. Of those, only the last two types really have dine-in as a default, and realistically
Some years ago in Denmark, the supermarket Lidl made a hidden camera campaign where they would have a Michelin restaurant serve food only from the supermarket to the customers unknowingly. After they ate, they were asked about the food and then they received the supermarket receipt showing they ate from Lidl. Showing how presentation can change the perception of food.
As someone who doesn't get fancy food I now at last have an explanation to why they make the food so small, but I still would like some bigger portions.
There's also the perception of a smaller plate being able to fill you up enough to call it a meal and move on. It's kind of a dieting trick to get you to the next meal time, but if you have enough discipline it works. I use it cause I'm always putting myself on a budget. Enjoying the small things while also stretching a few dollars when I can.
