How to make the perfect jacket potato

  • What exactly is a jacket potato you ask? In a nutshell, it's the English version of a loaded baked potato. A crispy outer shell or jacket and fluffy interior, combined with cheese, beans and all the fixings make for the perfect comfort food. It takes about 5 mins to get everything ready and then you can let your oven do all the work. Give this hearty comfort food a try the next time you have a hankering for a potato.

    Serves - 2
    Ingredients:
    2 Russet Potatoes
    2 tbs Butter
    1 can Heinz Beans
    Grated White English Cheddar Cheese
    Bacon Bits
    Chives (chopped)
    Directions:
    1. Waah/scrub the potatoes to remove any dirt.
    2. Slice the length and then across the width of the potatoes about 1/4" deep
    3. Place the potatoes directly on the rack in a 425 F or 220 C oven and bake for 1 1/2 - 2 hours or until the skin is crispy.
    4. About 20-30 mins before the potatoes finish, place the beans in a small pan and heat over low until hot.
    5. Carefully open the potatoes by squeezing from the corners and place a pat of butter inside and mix it in.
    6. Top with some of the grated cheese and bacon bits, then scoop 2-3 Spoonfuls of the beans over the top.
    7. Finish them off with more grated cheese, some bacon bits and chopped fresh chives for some color.
    *Notes*
    We typically get the beans at Cost Plus but have also found them at our local grocery store. They can also be ordered from Amazon (what can't these days?) -

    This is a really easy thing to make on those nights when you don’t want to be in the kitchen… a little prep work and then your oven does all the work.

    From England UK here.
    Hi I cook my jacket potatoes the same except I use a skewer/metal kebab stick, to pierce the potatoes all the way through then bake. I make the same marking with a knife and pinch as you did but that’s after it is cooked. Beans and cheese classic here. Also chilli, tuna mayo or just plain cheese. Delicious 😊

      My mom used to bake potatoes with an aluminum nail through the middle when I was a kid growing up. I’ll have to pick some up and give it a try. 😄

    As a British guy I have to commend your wife and you. This is how we like it and you did it well. Good you cooked the beans over time so they are soft. Brits are notorious for rushing and they’ll microwave it all for disappointment

      I’m far from perfect 😄. I’ve done them both ways, but stuck with the way my wife first made them for me when we were dating. This is one of our fall/winter favorites.

      I find they work better without olive oil.

    Perfect timing. We're making a plant-based version as I write this. We were looking at each other wondering what to have-we wanted something more than a snack and less than a full meal. I often put leftover chili on a baked potato but I'd never have considered baked beans Excellent football food. I can see us having this often. Thank you for sharing.

    I substitute Bush’s Vegetarian baked beans, here is the States. Tastes the same and way cheaper. I also use shredded Mexican 4 cheese blend . Same with Beans on Toast!

      Sounds good, we change things up from time to time, but this is the way we were taught originally.

    Hi, can this be done without an oven on a microwave or the stove?

      You could do it in the microwave, but the skin won’t crisp up like it would n the oven. Never heard of this being done in the stove, so can’t say in that.
