For the iSi, do you pre-heat the mixture? Do you add the mixture after you whisk it? I'd assume you just have to mix until homogenous and the charge does the whipping for you?
I preheat the mixture the same way I did when making it for a single serve. You have to mix constantly it while heating it so eggs form nice foam. Otherwise you might get some curdles.

Probably would fit more the warmth using arancello (even more than lemon, maybe)!

Is there a secret to heating the mixture without scrambling the egg? Or do you just use low heat while mixing the egg with the other ingredients?
I guess it's all about low heat and constant whisking
