Smoked Mushroom Jerky fea. Mr Maitake as Hen of the Woods

  • Mushroom jerky is an incredible treat, most people can't tell it's not meat! I use wild Hen of the Woods (Maitake) but you can use any choice edible mushroom from the wild or store bought. The main thing about making any jerky, mushroom or meat is it's thinly sliced no more than 1/4" thick or it won't dry properly. I like mine dried to break crisp so it can be kept at room temp indefinitely but you can certainly dry it less if you refrigerate the finished jerky. Hen of the woods is my choice to use because it's very easy to find large amounts in season, tastes great & has numerous medicinal benefits. Talk about a healthy snack!
    If you don't have a smoker a dehydrator works great or even an oven on its lowest setting with the door slightly open. Of course a smoker adds another level of flavor but it can be somewhat mimicked with liquid smoke used carefully. Marinade recipe, as you can see I wing it with what usually use for venison jerky but any jerky marinade will do. The most important thing is to precook the mushrooms by boiling for 10 minutes because no mushroom should be eaten raw!
    A note to my fellow gourmet mushroom farmers. We all get excess mushrooms from time to time so this could be a great value added product to your business! It sure came in handy as I had lots of oyster varieties growing when the 2020 lockdown hit. What I couldn't donate to food banks or give away got turned into jerky & mushroom ketchup.

    I just found my first hen of the woods mushroom today and had never thought about making mushroom jerky. It looks delicious!

      Congrats! Take a photo of each one you find for your records because they'll grow back around the same time next year.

      My pleasure! This species grows across North America. & In Japan too. In Japan it's called "miatake" which loosely translates to the dancing mushroom

    Thanks for the jerkey tutorial! I've already cooked/dried/gifted most of this year's first cluster, but there's another 3 on the way at the spot I frequent. Looking forward to jerkeying some of the next harvest.

      Thanks! Truth be told I started out to make a Japanese style garden shovel/knife but as I forged it the metal just screamed to become a beaver tail knife right out of history books.
      Glad I could share a rarely used method of preserving mushrooms into jerky. Most people that try it swear it's venison or beef, not believing it's actually mushrooms.

      They can make very tough knives if heat treated & tempered right. I've made hundreds of them over the years.
      Thinking about starting another channel to teach my craft as a blacksmith for over 50 years. Starting with the very basics on to making products to sell & perhaps some bladesmithing pattern welded steel. Would you be interested in such a thing?

    I am a avid forager and I was wondering if I clear the debris around the big oaks that I found that do produce if it would help keep it from growing around the leaves. I have some nice spots close to the house and I definitely could keep up with it but it also makes me think if I should do it in June and wait till august September for PA weather. I also live on the mountain. Mostly mixed hardwoods with patches of spruce and pine. I almost forgot to ask you. Would you make me a mushroom knife for harvesting? How would I go about it ?

      Not certain. While it might help prevent that it might also lower the moisture content in the soil causing low or no mushroom growth. Last season was pretty dry so most of my spots either didn't yield any or they were very small.

    How long they last in a plastic bag?

      As long as moisture is kept out a fairly long time. I have some from last spring in my truck for occasional snacks.
