Good morning! Why do you wait for it cool before stirring it? Does it affect the texture if you stir it immediately after taking off the heat? What does stirring it to take the shine away do? 🌷

I make old fashioned fudge every Christmas just like my mother and grandmother and there has never been a time that I didn't have to throw at least one or two batches out because they were too gritty, hard as a rock or too soft. I've used this recipe and method twice and both batches came out perfect! I have to make two more batches this week and I'm sure they will be perfect too because now I know...😁🎅
Batch #3 is even more perfect than the first 2 and I wish I could share a photo. It's the perfect firmness that melts in your mouth, perfect taste with a perfect shine on the top. Can't wait for everyone to try it Christmas Eve. 💯
I was born in 1952 & my sister in 1954. Mom would make this at Christmas. Dad called it "candy" not fudge. Remember Mom stirring like crazy. She would peanut butter too.
Looked so good! I remember that fudge. I had a girlfriend in the 70's that made it. She was diabetic and I would have to take most of it away from her. I remember it being very smooth with a nice bite.
Oh my goodness, I recorded this video 3 years ago. Let me see. Cook over medium heat stirring constantly until the mixture comes to a full rolling boil. (that took about 7 minutes) now continue boiling, WITHOUT stirring, until it comes to 234 degrees. That took about another 7 minutes. I hope this helps.

Had it in the 40s my Mama made it and divinity and they always came out perfect!

My mom was making this in the 50s. I was born in 61 and it was only fudge she ever made
