So, even though the default keycaps don't let light through very well, could I swap out the keycaps with lets say some shinethroughs from NuPhy and be good to go ?

I like the key switch action but the lack of key mapping is a big omission

I do not see why not. Though you do lose a slight bit of creamines for what ever reason. The Lofree keycaps are thick.
May I ask what is the yellow usb-c cable used in the video with the light up aviator connector?
