A whole ham is made up of the shank and butt portions. When you’re cooking for a large family, this is the one to choose.
You can find them fully smoked in grocery stores during the holidays. Expect a whole ham to weigh somewhere between 18-20lbs and there’s not much waste.
For this recipe I’m firing up my Ole Hickory and double smoking this ham with a little Cherry wood for a second dose of smoky goodness.
In essence we’re just warming it up to a safe serving internal temperature of 140⁰, so the cook doesn’t take a long time. Bring your pit up to 250⁰ and get the ham on the cooking rack straight out of the package.
Any smoker can be used for this job. Keep the temps steady and use a couple chunks of wood for good clean smoke.
After the ham cooks for 1 ½ hours, insert a probe thermometer into the center away from the bone. You’ll need a good probe thermometer like the Thermoworks Smoke to keep an eye on internal temp. You can check out the Thermoworks Smoke here: www.thermoworks...
Once it reaches 135⁰ internal, it’s time for the glaze.
Maple Glaze:
- ¼ cup Maple Syrup
- ¼ cup Dark Brown Sugar
- ¼ cup Light Brown Sugar
- 2 Tablespoons Honey Dijon Mustard
- 2 Tablespoons Apple Juice
Bring the mixture to a simmer and reduce until it thickens.
Brush the glaze over the outside of the ham and let it cook until the internal temp hits 140⁰. At this point the Whole Ham is ready to eat.
Take it inside and let it rest just a few minutes before slicing.
This one makes for an amazing Holiday Centerpiece on any Christmas Table.

Great recipe, tasted awesome but I think this comment should be seen . Took me 5 and a half hours to get it up to 140 at the 250 cook temp . In the video he says “a couple hours” it’s gonna be more like 5 just wanna let ya know

Used to go camping near Petosi my buddy had a cabin and about 60 acres. We rode our quads in an old dried up lake bed or and old quarry cant remember. Pretty neat area. The army core of engineers had semi trailers for bridges to cross the creeks down there in the hollers
I’d also list Hampshire as another really great ham quality breed as well as duroc. A little leaner so you have to pay more attention to marbling when purchasing both both are great quality from my experience raising them. Great video

For my part in tomorrows cooking im cooking the turkey and ham and my mom is cooking all the sides and i am hosting at my house. Im gona oven roast the turkey and I am/was gona crockpot my ham starting around midnight and let it go.
Here's why, I usually sleep in til noon altough ive been on a good sleep schedule and getting up at 9-10am naturally. The midnight crockpot was a fail safe if i overslept haha..
Were having dinner at 3-4pm and im thinking instead of crockpottin it tonight if i get up at 10 I could smoke it a few hours and if it were done throw her in the crockpot to sit until dinner time.

Doesnt the process from lighting coals till the get hot emit chemical smells from the charcoal?
I was always taught to burn the chimney and when refilling or stocking the box to always use already burned embers unless its lump charcoal..
I know theres the minion method etc but don't the briquette types have fillers and additives to get em going ? Not talkin match light but regular kingsford style briquettes. Anyone have any insight or feedback?
Example: if im usin my offset on a long cook i usually burn another chimney full and then add once its burnt off instead of adding raw briquettes to my dying embers..

mine was a smaller cut . in hindsight i would have put the glaze on earlier with mine.
I plan on smoking it Friday and eating Saturday. Should I reheat to 140 before eating it

I'd say about 3 hours or so... Remember, you want to cook to temp more than anything. 🙂
