    Coconut Curry Lentils Recipe:
    This recipe was created by my close friend Josefa, @naturalwellnest, and it’s one of her classic favorites we love to enjoy. Together we tweaked the recipe to have a new flare which turned out so good! It is a large recipe which is perfect for saving in the fridge for left overs over the next 3 to 4 days. Reheat and serve with steamed rice and your favorite toppings or on its own for a quick, filling, and healthy meal.
    makes 6-8 servings
    1 brown onion, diced
    1 medium sweet potato or golden potato diced
    1-2 tbsp fresh ginger, peeled and minced
    5 cloves garlic, minced
    4 cups organic green lentils
    2 tbsp curry powder
    1 tsp turmeric powder
    1 24oz jar tomato sauce.
    2 13.5oz cans coconut milk
    2-3 boxes (32oz each) low sodium vegetable broth (sub water if using less veggie broth) 1 head curly kale, chopped
    3 limes, juiced
    1-2 tsp salt
    Optional: red pepper flakes
    Toppings: cilantro, avocado, and diced tomatoes
    In a large pot sauté the onion, sweet potato, ginger and garlic with a little veggie broth on medium/low heat. Continue cooking until the sweet potato is slightly softened, about 10 minutes. Continue adding liquid as needed to keep the veggies from sticking to the
    pot (either veggie broth or water.) Add the lentils, curry powder, and turmeric and mix together for a minute or so. Then add the tomato sauce, 1 can coconut milk, and 1 vegetable broth, adding extra water or broth if needed to just cover the lentils. Add sea salt to taste.
    Turn up the heat to bring to a boil and stir occasionally. Once it’s boiling, turn down the heat to low, add chopped kale and simmer with the lid on for about 35-45 minutes or un-
    til softened and desired tenderness is reached. Adjust seasoning as needed adding more salt or spices. Once you like how it tastes then it’s done. Depending on your portions sizes, this dish served with rice and avocado makes enough for our family of 5 with leftovers for the next day or two.

    I started watching her 9 years ago when she started, this is crazy it’s been so long. It’s also nice seeing her not being so strickt anymore. From her being fully raw, rawtill4 and now including bread and pasta is so refreshing that she is not restricting herself as much anymore

But I can tell you, you can eat all the vegan foods, all the veggies, all the fresh fruit, and make all the snarly comments on youtube videos, but as long as you have disgust in your heart for people who live life differently than you, and as long as you use spiteful, nasty language toward strangers who are doing their best, you will never know peace. Good food in your belly? Great. Nasty feelings toward others in your heart? Gross, and bad for your health. Have a good day.

    I am not a vegan but I absolutely love how you eat clean whole food and not a bunch of processed classic “vegan” food! You inspire me in so many ways! I’m having my first homebirth for my 3rd baby thanks to you. My mom grew up on Maui in kula and my grandma lived in Lahaina for many years, I just feel so connected to you and your values.     I really appreciate that you and your sister are using your RUclips channels to show that you don't skimp on healthy, nutritious food (by way of 'what I eat in a day' videos). So many women, and perhaps especially vegan women, don't eat enough. Thank you for normalizing really nutritious food choices (in a junk-food-obsessed culture) and 'eating until you're satisfied' (in a body-image-obsessed culture). 👏🏽

    It's always weird for me to see mom influencers showing their "what I eat" videos and eating meals totally separate from their kids/making a single portion. I always sat down and we all ate together, seems like so much work to make yourself a separate breakfast and makes me curious what the kids were eating?

      Being a busy mom to many little ones and still nursing can make you feel that way as well. I know from experience being a mom to 8. But you are correct about the thyroid too, I was diagnosed with an autoimmune disease after number 8.

    I love watching your videos and I honestly thought you were the perfect example of someone who never indulges in cookies and chips.. i grew up in a household that going out to eat and having occasional ‘unhealthy’ snacks meant that I was an unhealthy eater and unhealthy alltogether… I’m really glad you say food is not what makes you healthy. I think it’s a state of mind. Being at peace with your choices to make your overall health thrive, and yes that means sometimes a bag of chips to cure the soul 😂

After hearing it a couple times, I think I know what your little one was trying to say 😄 if you hear right before, you were talking about the creamy avocado and you gave an expression like “awghh” and then you hear her say something like, “mommy said awww” !     I make salads similarly. I add left overs to mine to. My family loves the salads I make. Anytime we go to family events or pot lucks I am asked to bring one of my salads. I love salad and vegetables.

    This is first video I watched - it was on my home page. I love your balanced thinking and healthy eating but also that you allow yourself to eat something different. I had few friends who went vegan and it become obssesion. They only now hang around with vegans only. It's sad to me but what can I do.

    I love matcha with oat milk, bit I had to quit it because it make me shake my hands after an hour of taking it... Don't know, i can't drink coffee for the same reason, but matcha is not supposed to have caffeine, isn't it?

    I wish papayas were native here. The ones shipped here are not that good. If that’s all I had I would think they’re not good, but I had them when I visited Belize, and they were to die for! Hawaii is gorgeous.

    Anyone know anything to help with gas from eating fruits and veggies? Even when i introduce them slowly, i have so much gas. I feel better in general with plant foods, but my stomach/intestines can't handle it well. I have super slow digestion (i have dysautonomia), so plants help me become more regular, but not without an EXTREME amount of bloating and gas. I never get diarrhea, just become regular.
    I also take pain medication, so I have probably killed my whole GI track, but it's necessary for me. My 12 year old hates that I am passing gas all the time. 😂

      Drinking Fennel/ chamomile/ peppermint tea helps me and going for a 10-20 minute walk before or after eating a meal that has so fiber filled

      Hey I'd suggest listening or reading Fibre Fuelled by Dr Bulsiewicz. He then has a cookbook too:) I think Ellen had him on her podcast, but I have found it really helpful 😊

      It can take your body weeks to get used to a large increase of fiber.

    Has anyone made the curry lentils? I’m confused as the recipe says two cans coconut milk in list of ingredients but then only prompts to add 1 can in directions. Does anyone know is it one or two cans
