    Vegan baked stuffed shells (I doubled this recipe for my family of 7)
    16 oz wheat jumbo shell pasta
    2 large jars of your favorite marinara
    1 cup packed spinach, chopped
    Basil for garnish
    For the ricotta
    1 package firm tofu (pressed in a towel for 10 minutes to get out excess liquid)
    1 cup raw cashews, soaked in hot water for 30 minutes
    1/4 cup nutritional yeast
    1 Tbsp Apple cider vinegar
    1/2 tsp salt
    1 t garlic powder
    1/2 tsp onion powder
    Drain the cashews then pulse the ricotta ingredients in a high speed blender until mostly smooth, using the tamper to push the ingredients in the blade.
    For the parmesan
    1 cup raw cashews
    1/4 cup nutritional yeast
    1 tsp garlic powder
    1/2 tsp salt
    Pulse the ingredients in a dry high speed blender on medium / low until powder fine. Store in an airtight container in the fridge or counter and garnish on all kinds of pastas.
    Cook pasta halfway then take out and place on a baking tray lined with a bit of olive oil to keep it from sticking as it cools. Keep the pasta sheets separate from each other so they don’t stick too. Then place a thin layer of marinara on the bottom of a large casserole dish. Mix in the chopped spinach into the ricotta with a spoon. Then fill each shell with the ricotta mixture and place on the casserole dish. Top with plenty of marinara and sprinkle on the cashew parmesan. Bake at 350F for 20 minutes covered with aluminum foil. Then take off the aluminum foil and bake for 15 more minutes. Let cook for 5 minutes out of the oven then serve!

    Spend all the time you can with your children, they grow up so fast. My son got married yesterday and I can’t believe how quickly the last 28 years went by. I have lots of beautiful memories of his childhood that made me cry as I watched him dance with his bride yesterday.

    A year and a half ago I quit a good paying job that took me away from my family too much, for a part time job that is no stress and pays me almost nothing. I am way happier now - I get it.

      How!? How do you get paid almost nothing and still make a household run? How because while I have all the "tools" to raise kids I do not have a "means" to raise my kids.. and working is the only the only way to provide those tools for kids.. I don't understand.

    Having children is a full time job, and you have many of them! You juggle a lot already! Take a break for a while or make some shorter videos or just less posting in general…but always prioritize the family! You have a beautiful one ❤

      Totally agree, great if you have the option to cut work back and still maintain a home and all activities your kids want you to do do and I am glad she is able to achieve this and be happy for her. But there is many esp in this recession that definitely do not have an option to cut back work due to financial restraints and thus are not able to spend that time with our loved ones, it’s sad that the world is in this state that you have to choose work over family:(

      This expressed it all. The internal struggle is real. I have a feeling she is going to announce that she is cutting back on her youtube presence. I am hoping that is not so, for purely selfish reasons, but I my love and respect which outweighs my selfishness wishes her all the best in whatever she feels is best for her and her family.

    You are lucky Ellen, you have your husband all day at home with you, I brought my 4 children up with my husband out at work all day, he couldn’t help me with that, I also worked and I know you do but with Andrew home all day with you it makes life easier for you, honestly its so much harder doing it on your own 😞

      @@Brooke52528 You’re right she is, I’ve read about other RUclipsrs that homeschool their children and how beneficial it is, I considered it for my boys but when we put pen to paper we just couldn’t afford it, I think people need to be mindful that we are not all in a position to do this, we don’t have a choice.

    You and your husband made the decision to have five children. And maybe you have realized that giving them the time needed is a job in itself, otherwise you can shortchange them in some way. It seems as though you are trying to convince yourself that you are making the right decision to decrease your other work. Stop, you don't have to go on and on. Everyone who watches your channel gets it. No one is a dummy here, otherwise they wouldn't be watching. Just do what you need to do, you don't need anyone's permission.

    I left my very well paying job in corporate Healthcare in October due to high stress and a myriad of stress related health issues. I became a special education teaching assistant and it was the best decision I could have made for my well-being and mental health. My husband and I both realized that no amount of money is worth losing your mental health to a company that will replace you with in 14 days of your death. You take care of you and your family by doing what is best for you and your family. Much love ❤❤❤❤

    So basically you are giving up RUclips or going on to Patreon or a paid thing is what your hinting. In a selfish way I’ve been here from the start, since Elvis was a tot and you are one of my favourite RUclipsrs which makes me very sad, I don’t enjoy the podcasts as much but children take time to grow and nourish and if you’re in a position not to have to go out to do a job or work full time you go for it. Children are small for such a short time.

    She said she “rarely meets someone who doesn’t feel their life is full”. This statement is far from the truth and I Don’t believe that to be true .
    I’ve never met anyone who said their life is full. Most people I know and have met are unhappy and unfulfilled.
    Most want people to think they’re fulfilled and have a close to perfect life when that is not their reality.

    Yes, its completely plausible that if I work less and make less money, my landlord will be totally cool with me making less and not paying rent. Sounds right. She forgets not everyone has that luxury. There's nothing wrong with having a large family but in this day and age with inflation and cost of living riots a lot on parents.

      except I wasn't speaking about everyone else's experience...just sharing my own. is that not obvious that I am not speaking on behalf of every single person's lived experience? We all are experiencing so many differences in life...not to mention this wasn't always my experience and I used to waitress for years, rented a tiny apartment, even lived in my parents house for 6 months with a baby to try and save money. life has so many layers and also different experiences from one decade to the next.

    This was such a beautiful video and I needed to hear this message too. I just quit 10 year marketing director position this month to spend more time with my children and welcome our 3rd baby. My husband is also military and will begin 6-7 month deployments next year. I will only be freelancing on the side now and it’s been a huge shift and very challenging, though I know it’s needed.     You are very lucky to be in the place you are. You have made 2 videos this year but a lot of women have to put in 40, 50 or 60 hours a week to put food on the table and a roof over the heads of our family but you put out the "Whoa is Me" content. Why is that?

    This video hit me at my core! This last year has been a whirlwind for our family as my oldest had a traumatic experience with kindergarten in public school resulting in me pulling him to homeschool. Having my children home more has made me really struggle with working full time as I have felt I’m juggling too much and as a result, failing in all areas. I know that not everyone can afford the luxury of putting work on hold however it requires lifestyle changes. A homeschool mom friend I made, chose to sell her dream home and downsize to align her priorities with her heart. I have been feeling that this might be my future as well.

    Ellen, I feel this 1000%. I’ve been experiencing a “burnout” type mental breakdown once a week lately and I just keep thinking “it’s too much, it’s too much”. So I’ve been thinking heavily on what I want to/can let go of so my life is simpler and so I can savour my life as a mom to my toddler - which is the most important job I’ll ever have. As a fellow woman and mom my heart encourages you to do what you need to do ❤️

      No one is forcing you to consume if you do not want to. Some people can afford and want to treat themselves to a luxurious life and that's okay. Buying cheap products is still consumption and most times more harmful to the environment.

      She is doing podcasts , yt videos (you need to do preparation for that) maybe other projects.
      She has 5 kids and a husband and they do homeschooling and have house and garden work to do.

    I still think more family content creators stopped showing their kids faces on socials. My guess is that they want to avoid oversharing the images of the kids, which is understandable considering the millions of followers they have. For me though it's such a joy to watch young families in their every day life and see them grow up.

    Try sauteeing the turmeric with your onions. It will taste ten times better when sautéed and the uncooked taste is cooked out. Don’t forget to add a little black pepper to make it bioavailable.

    I understand the sentiment of the message in this video however, I think we need to be careful when telling the stories of our lives in terms of feeling the need to sacrifice. The word sacrifice (to me) is disempowering. It's completely OK to change focus as priorities in our lives change and it doesn't have to feel like a sacrifice.... it can simply feel like the right thing to do. I think we were meant to do it all in the way we want to do it. Do all we want to do at any given time, following our intuition from moment to moment and just live our best lives. If we feel like we are sacrificing something, it's usually because we feel like we might let others down. But we aren't here to live our lives for how other people see fit, so if we feel a desire to shift our focus, we should allow that and it serves to empower others to do the same. Not out of sacrifice, but out of honoring what's right for us. It's just living authentically and unapologetically. Love your videos- not here to disagree or argue, just sharing an empowering point of view. ❤💖

    Maybe you can streamline more your videos? All of them are so highly edited: blip, blip, blip all the way through. Maybe plan what you are going to film, write bullet points of your conversation and then your editing would be so much simpler & less time consuming. Or embrace your role as mother of 5 & let Andrew be the chief breadwinner--no wonder you feel stressed & a weight on you! I was just waiting when you'd arrive at this breaking point.....

    Love this. Recently I’ve dropped more off my plate to focus on my family and invest there more. I thought maybe I’m just being lazy trying to not handle as much but as I’ve noticed in the different folks around who chase careers or fill their time so much, especially the moms, it seems something always gets neglected and I can tell pretty quickly it’s the kids. It reminds me I’m not going to regret keeping my focus on my family now. That’s where I want my success to be.

      Yeah we only see the kids from behind. I think it may be to keep their privacy. Her sister Hannah never showed he kids' faces early on, on her channel.

    The most important thing is to build a relationship with God, with yourself, and your family. That takes time and effort and a lot of ups and downs that only faith can make you go through. Life is effimerous. Enjoy it the best you can!

    Unfortunately for many, they don’t have the option to cut back or work less as money is so tight. And many have to leave their children every day to go to work even though they don’t want to. I’m glad for you, that you are able to reduce your workload and create more balance in your life , I get it. I just wish that choice was available to all ❤

      I was having a convo in my mind about this concept this week, bc I have four kids btwn 1-18yo.
      I have been their main caregiver for all these years working very part-time.
      I often hear this described as a “privilege”
      I think it’s more of a sacrifice.
      I think most families CAN cut back, however- that likely means changing lifestyle, maybe location, etc
      It’s possible for most if they are willing to sacrifice, totally possible and totally worth it!💛

    Adding another comment...you and Andrew have carved out great life that requires two adults at home. Is there anyway you two could carve out two days a week where the kids are not there...9am to 4pm? You have designed this beautiful life around them. But it has to be designed around the good of the All. Everyone has to get their best. Having some mental breaks to re charge is healthy. Some places have wonderful Christian schools as well. If you would consider it? You can't do it all...❤

    I know this will be a radically unpopular thing to say here, but consider putting your kids in school. The pressure for you to be "teacher" (which I'm assuming is not your profession, but I might be mistaken) as well as wife, mother, vlogger, gardener, cook, housecleaner, entertainer, organizer, perfectionist is not realistic. It's just not natural to spend all day, every day with your kids. I know everyone will be quick to defend the homeschooling culture, but just sit with these words for a bit.

      I understand your point of view! But as a prior teacher of 5 years, she’s doing the absolute best thing she can be. Our education system is quite frankly… a joke 🤦🏻‍♀️ These kids will grow up with a far more well rounded and fulfilled education and life.

      Not natural? Yikes, what could possibly be more natural? Throwing your kids to someone else would be an absolute last resort, not the 1st. Work will always be there. These moments with your kids you will never ever get back. Homeschooling has made our lives so much happier. I can't imagine seeing anything else as a greater priority now.

It seems you never experienced the natural way of being raised, taught, played with, comforted, fed, clothed, bathed, EVERYTHING done with you and for you by the women who carried you for nine months and birthed you into this world… being with your children 24/7 is the most natural way of life.
      The school system is more modern than we’d like to believe. And more corrupt than we’d like to believe.

      @@ceciliatucker8889I had an amazing time at school, with great teachers and a great friend group. I do think it’s healthy to have some sort of autonomy from your parents, and also to have a separation, for them to simply be parents and not your teacher as well

      What about their dad? Even if you and he aren't together, isn't he in their lives? And contribute to their upkeep? Do you have girlfriends who are also mothers? Trading childcare one day a week is a great way to leave your children with someone you trust and have self-care.

    A piece of advice for moms of young children, enjoy where you are at. So often we cant wait until our babies can walk and talk and before you know it they are teenagers and not the little cuddlers they were when they were small. Eighteen years goesby quick and you can never get those days back when they were little so treasure each day as a gift so when they do become adults you wont look back widhing they were little again! Also once they grow up, go to college, work or get married you will have a ehole lot of time on your hands to pursue all those hibbies, travel, learn a new language, change careers, etc.... Please also put your phones down because what you do today are tomorrow's memories! Peace & blessings

    You are right to want to not work at a job. A mother of 5 has lots of work to do. You two have picked the best things in life, homeschooling, good food, enjoying life, growing food etc. There is a reason people are in tiny houses, fixing up busses, they don't buy the work till retirement then enjoy life script. My Father in law was a principal as his career. A new grandpa, just beginning to enjoy life. At 50...heart attack.. gone. We do need finances, but this is your life here now with 5 kids. Be there with them...go camping...swim. You will call these the best years of your life. Being a Nana is wonderful, I love it. But there was a little moment my kids were just with me. And we were this family around the table.
