The spike in 2007 might also be because that's when kids who grew up hearing the sparse references in rap songs finally got to be rap artists themselves.
They mention "it's used a lot in freestyle" ... so when people improvise and form lyrics on the fly... going with things you "always" hear in similar songs is a natural thing there.
and after 2009 it was in the news all the time cause Fox decided to paint Obama as an elitist for asking for that brand of Dijon mustard. Explaining the even larger spike in 2011 and the following years.

It’s important to note the commercial was also so successful because of how funny it was to hear the word Poupon said out loud and then how fun it was to repeat it. If it was almost any other word I doubt the commercial would have taken off like it did.

all this video did was confirm my suspicion and strengthen the argument that rappers just reuse each other's lines, everything sounds the same nowadays
The low-quality (IMO) songs that are produced to go platinum/rank high in the billboards: Yes, I agree.
But there are many, famous and not so famous, rappers that release really great music and not just generic trash.
All music reuses other music to some degree the reason people say "everything sounds the same nowadays" is because you're hearing the most current trends. And plus this wasn't even a whole line it was two words.
That is true of virtually all musical genres. Baroque and Classical era music was fraught with reuse as well. And really back in the day, once you've heard one Gaillarde, you've heard them all, and the only thing that matters in that song is the beat.

It is a status symbol and it is easy to rhyme with.
This is not some grand mystery, Vox.
Sure you could simplify it, but the point of making the video is to explore the current uses for Grey Poupon and how it started. It was seeing the contexts in which the condiment was used, because some rappers used it as a status symbol, whereas others were using it in "tougher" economic situations, and others just as an analogy of sexual acts.
