I put my cakes in the fridge in a corrugated cardboard box and let them sit at room temperature for a few hours to avoid condensation. And I never have any fresh produce in my fridge, if I’m working on a cake. However, it is important to know your fridge and your room humidity because the difference causes condensation, not the fridge itself. It is better to use a hygrometer and check the humidity to protect wafer paper from melting.

Hey! Welcome. I would highly recommend you to use a humidity meter to check your environment. Generally, wafer paper can hold it's shape up to 65% humidity.
