- These potato cakes are oven baked with melting soft buttery insides and a slightly crispy outside. Filled with ham and chives. Great as a side dish for chicken, meat or simply enjoy them on their own with a salad. The recipe makes 12, but why not double it and freeze half ready to use. Chef Joel, I watched this video yesterday and I made your Mashed Potato Cakes last night... I followed each step until it was time to put them in the oven... Instead, l popped the tray in the freezer and once they were frozen, I wrap them individually. The “MPC” only took about 12 to 15 minutes to defrost sitting on the kitchen counter. I baked my “MPC” in my Toaster Over at your recommended temperature and just a couple of minutes longer... I doubled your recipe and I now have Breakfast for at least a month. Unless my Grandkids sleep over... l really hope they do!

I cooked this beautiful and simple dish yesterday. However, I halved the amount and made a salad with green beans, red onions and a classic Vinnaigrette. It tastes really good and I can recommend it.

As a total potato head this looks great - anything that has potatoes and other stuff is a huge win in my book - I would have tried them even without the ham and chives but hey - bonus!...not to mention the butter ( not possible to have potatoes without! ) - a big YES....

Joel my good Aussie friend, very nice recipe, i'm irish , you know that, so i'm going to make these, & yes the stereotype is true, we irish like our taters,lol, i eat them appx. 280-300 out of 365 days a year in some form, baked, fried, roasted, etc..., the other days are rice or pasta. I usually make regular mashed taters for a supper, make enough for leftovers so i can make all types of tater cakes like yours the next day , this one is new to me & some i bake, some i fry in bacon fat in a cast iron skillet. Do not change a thing on your recipe, in my opinion, looks delicious. ( btw, i had a hard time finding those metal rings used for tater cakes, eggs, etc... so i made my own. Used canned tuna for tuna salad, cut off the bottom of the can with can opener, soaked off the labels & i have rings for taters, eggs, etc...lol, i did mention i'm a hillbilly, lol, cheers mate !

I just tried this with left over instant mash. They splayed out like a cookie dough would; maybe I should have let them set up a bit after they came out before I tried to 'spatula' them off of the parchment paper, but they smell wonderful! I used ground black pepper, turkey lunch meat, a good shredded parmesan cheese, very finely chopped onion (moisture alert!), two egg yolks and then three pepperoni's on top and then more parmesan cheese.
They were delicious!! Wow!

...I made these and they taste incredible - the only issue is cook time. After about 20 minutes, I turned on the Broiler to crisp them up, but you need to watch they don't ignite:)

I love making stuff like this and then just freeze most of it, so I can take one whenever I feel like it - even better when the recipe suggests doing that. I already made toaster pasties - just toast (twice for extra crispiness) one for an incredibly fast meal. Do you guys have any recommendation for anything else like that that's awesome to have in the freezer?
