I have to cook the spices to release their flavor and then add the cooked potatoes to it. When I add spices directly to the potatoes, to me, there’s an undercook taste. I’ll give this a try!

Actually u could have added crushed ajwain, crushed ginger, dhaniya , aamchur,shortly chopped onions and crushed cumin or cumin powder.All these enhances the flavour and it will be more tastier .Aloo paratha is one of the best combination with raita or curd👍
