Thanks for acknowledging our commitment to our community, and for your feedback :) We recommend against buying chestnuts with soft (or flexible) shells. If you can see the shell flex when you push in on it, in our experience the chances soar that the nut inside is moldy or otherwise bad. If you already have the nuts, you can give them a shot (score, soak and roast as usual). Obviously once you peel the chestnuts, take care as always to check for discoloration or signs of mold. If the nut is bad, discard it.
I rarely write comments or reviews, but I had to review this video. I love chestnuts and I have always struggled with peeling them no matter how I scored them. Last night, I tried this method and the chestnuts came out perfect and easy to peel!!! I was hesitant about trying this method because I didn’t like the idea of having to plan ahead so I have two hours to soak the chestnuts, but now, this will be the only way I make chestnuts from now on. I followed the directions with no compromise and guess what??? The best chestnuts that I've had in over 50 years. I just want you to know that I have never been without chestnuts at Christmas time since I was a kid. These simple easy to follow directions, will produce wonderful results! Perfection! For years I've been frustrated by peeling chestnuts after baking. Now I know why. I only scored them, as recommended, on one side. You showed a much deeper cut all the way around. That's key. After scoring using your method, peeling was a breeze.
I grew up in the 50s and my Dad would buy chestnuts every autumn to roast in the oven. I can remember him piecing them before placing in the oven. He was from Bradford Yorkshire and loved roasted chestnuts. He was the only one in the family that seemed to like them. That was so long ago, I don’t remember what they tasted like

This was my first time eating chestnuts. I experimented with 3 different batches. 1.) was simply scored and baked at 400°f for 20min 2.) Scored and soaked in red wine for 2 hours. Then baked according to the videos instructions (350°f for 20min then add some ice cubes to oven for humidity and bake at 425°f for 10min...let rest in a bowl with damp towel covering.) 3.) Scored and soaked in water for 2 hours. Then baked according to the videos instructions. Results: - During the baking process my whole kitchen smelled like sweet bread. - The first batch had a dry outer layer of the nut meat with a consistency of dry potato. It wasnt great. - The other two batches that were soaked before hand were moist and sweet. Now I understand the importance of keeping the nuts hydrated during and after the baking process. The wine soaked ones had very little if any wine flavor. I think next time I'll try soaking them in whiskey. Summary: It turns out chestnuts taste like dry potatoes. They are almost identical in consistency with baked Jack Fruit seeds. Overall I didnt care for them but if I ever bake them in the future i'll definitely be using the method from this video.

I’ve messed up chestnut roasting so many times, I’ve given up until this video. Never knew about the soaking and covering with a wet cloth. Those might just be the important missing steps so I will definitely get some chestnuts tomorrow. 😋 Thank you!

This looks like a nice method. I am a bit impatient and like to cook 6 or so for myself quickly. I keep them cold in the fridge, pick out 6, and poke them in 4 places with the tip of a knife. I like your scissor trick. The wide flat ones get poked in 6 places so they don't explode. I have a stainless steel basket and cook them right on the open flame on the gas stove, turning them frequently until the shells get black, smoke, and split open. This works on the coils of an electric stove as well with the chestnuts directly on the coils. Just turn them frequently. When the shells burn, they add a nice smoky flavor to the nut meat. The smoke also adds to the aroma of the house on a cold rainy night. This method of cooking makes great flavorful chestnuts in 5 minutes. There is no soaking or damp cloth necessary. Going from fridge to fire makes the paper inside the shell separate easily from the meat. I save the shells and burn a few in the basket on the stove before friends come over. Its an alternative to a walnut wood fire which also smells delightful.

It took me 2 hours to clean my oven thoroughly when I cooked chestnuts in oven. It exploded with massive mess. Now I learn! Thank you for sharing your knowledge. You’re awesome!
They explode when they are not scored well enough. Sorry that happened! It has happened to me also but it doesn't stop me from making them. I know that I just need to score them more

Growing up, my mother would roast chestnuts, but they were very difficult to peel. Towards the end , our fingers would be so sore! She scored the chestnuts and put a damp towel over them after they came out of the oven, but missed that crucial step of soaking them for prior to cooking. Thank you! Great upload. 🙏🏻💛🌰

We used to live in Paris and we could buy it around. Christmas holiday all over the street of Paris like 6 for a 1 frank ( it was in 1980-1990 so they still had frank if I am not mistaken ) but I haven’t seen any for sale even in the groceries in MN yet ! We all loved it 😊
This worked perfectly. I soaked the cut chestnuts for 2 hrs. I left the roasted chestnuts in a glass bowl with a wet towel on top for half an hr and they came out easily. I'll never battle with other ways again. Many thanks
The days of post war childhood in the early 50s - the aroma of roasting chestnuts by the fire and indeed , also in the Aga , is one of such happy family memories and such happier times .

I love chestnuts but have never been able to tolerate eating them after roasting. I may try this…but most likely I will keep enjoying them raw. Very detailed video 👍🏻
How do you cut open when they are raw? I found it to be difficult to peel. What do they taste like? Does it have bitter taste? I don't like things that have bitter taste. Thank you.
My husband is doing this NOW. I adore chestnuts and he's been struggling to find the easiest and the best tasting method. So far, even more difficult methods still yield decent-tasting finished chestnuts; it's hard not to find some redeeming good taste even in a so-so chestnut unless it's been compromised by mold or something. Even the so-so ones are worth eating, but maybe not worth all of the work and the sore fingers and joints. Having found your method here, we are very hopeful! Stay tuned....
I wanted to ad that we've done two batches using the methods in this video, and the advise is solid, sound, very accurate. By far the easiest peeling experience I've ever had, though a few chestnuts resisted (due to the way they were formed inside the shell, allowing the inner skin to penetrate deeply.) Also, we discovered that the bit about rejecting the nuts that have a small amount of give, or apparent space between the shell and the innards is also very accurate. We found that they yield nuts not worth your effort even if you eat what might be edible. Great video!
Purchased chestnuts for the 1st time today from a farmer. Surprised I don't believe I've ever eaten one or known anyone who eats them. And I am 49 years old!

in portugal we put a bunch of salt on them while roasting, it makes them sweeter and we dont actually eat the salt, it stays on the peel or on the tray

Great video. I like chestnuts but the process to make them won't work with my short attention span. I make fall of the bone ribs and chicken in about the same time..

I would be curious if any of this advice changes using a toaster oven - for instance Ice cubes might tank the temperature more than it would in an oven

the last time i made chestnut, i actually only manage to eat 1/3 of the bag i bought. The rest were bad and rotting inside, but it was by far the best i've ever tasted. turns out there are different varieties and the one i got were known to turn bad fast but extremely sweet and tasty
I once ate them after all but one was punctured/cut then roasted. The uncut one explodes indicating that the others are ready. Don't think that they were soaked. Delicious.

Wish I'd known this before, they exploded in my airfryer using the roast function. Made such a mess and airfryer blade cannot be cleaned :(

Wow! Great tutorial. The utility scissors is a fabulous idea and worked like a charm! I was concerned about scoring them, and you gave a really great method. My chestnuts are soaking in the water as I am writing this, I am looking forward to roasting them…. Reminiscent of my childhood. ❤

Thank you for this video.. 2 question though.. if you're wanting to have some steam in there why dry the chestnuts before you put them in the oven? You may as well use that water for steaming

I love chestnuts but have never been able to tolerate eating them after roasting. I may try this…but most likely I will keep enjoying them raw. Very detailed video 👍🏻
How do you cut open when they are raw? I found it to be difficult to peel. What do they taste like? Does it have bitter taste? I don't like things that have bitter taste. Thank you.

My husband is doing this NOW. I adore chestnuts and he's been struggling to find the easiest and the best tasting method. So far, even more difficult methods still yield decent-tasting finished chestnuts; it's hard not to find some redeeming good taste even in a so-so chestnut unless it's been compromised by mold or something. Even the so-so ones are worth eating, but maybe not worth all of the work and the sore fingers and joints. Having found your method here, we are very hopeful! Stay tuned....
I wanted to ad that we've done two batches using the methods in this video, and the advise is solid, sound, very accurate. By far the easiest peeling experience I've ever had, though a few chestnuts resisted (due to the way they were formed inside the shell, allowing the inner skin to penetrate deeply.)
Also, we discovered that the bit about rejecting the nuts that have a small amount of give, or apparent space between the shell and the innards is also very accurate. We found that they yield nuts not worth your effort even if you eat what might be edible. Great video!
Purchased chestnuts for the 1st time today from a farmer. Surprised I don't believe I've ever eaten one or known anyone who eats them. And I am 49 years old!
We always eat them in Germany especially on a cold day strolling through the city we have chestnut vendors everywhere. It warms you right up !

in portugal we put a bunch of salt on them while roasting, it makes them sweeter and we dont actually eat the salt, it stays on the peel or on the tray

Great video. I like chestnuts but the process to make them won't work with my short attention span. I make fall of the bone ribs and chicken in about the same time..

I buy them directly from growers in USA northwest. I freeze them and can enjoy them long after the holiday season.

the last time i made chestnut, i actually only manage to eat 1/3 of the bag i bought. The rest were bad and rotting inside, but it was by far the best i've ever tasted. turns out there are different varieties and the one i got were known to turn bad fast but extremely sweet and tasty
I once ate them after all but one was punctured/cut then roasted. The uncut one explodes indicating that the others are ready. Don't think that they were soaked. Delicious.
